twice-baked alfredo potatoes
INGREDIENTS
  • Servings: 4
  • 2 large red baking potatoes
  • 1 cup alfredo sauce
  • 1 tsp. garlic powder
  • 1/2 tsp. pepper
  • 1/8 tsp. thyme
  • 1 egg, beaten
  • 1cup (8oz. ) shredded cheddar
  • 1/2 cup shredded mozzarella
  • (paprika)
DIRECTIONS
  1. microwave potatoes til tender
  2. slice in half lengthwise
  3. scoop out insides leaving thin shell of potato
  4. mix scooped out potato and rest of ingredients well til creamy
  5. pile into potatoes
  6. sprinkle with paprika
  7. bake, covered, at 350*- 20 minutes
  8. uncover bake 10 minutes longer
  9. serves 4
