This is a throwback to when we lived in Vancouver, Canada. At the beginning of our time there, I discovered capellini and loved it immediately for its ease and quickness of cooking. The long and thin noodle is an excellent canvas for flavor.Roast Potato and Eggplant Hash

Pappardelle is my favorite type of noodle. I love the look of its wide shape, and it holds sauce well. For this dish, I experimented with a combo of vegan cheese that’s made to be similar to parmesan and actual parmesan. The flavor profile comes from an olive oil, minced garlic and fresh tomato reduction, plus the cheese. I garnished the dish with parsley from our garden.Pumpkin and Fish Rice
I originally made this dish using wahoo, a meaty white fish that’s common in Fiji, but cod or salmon work well, too. Roasting brings out a caramelized sweetness from the pumpkin. I stirred in fresh parsley and chives from our garden in Fiji.Shrimp Fettuccine
Fettuccine is one of my favorite Italian noodles. I experimented in this dish by chopping mint leaves picked from my garden in Fiji and stirring them into the pan with all the ingredients at the last minute. One of the things I think about when conjuring a dish is getting maximum effect with minimal ingredients. I like simplicity. It’s good for creativity. I envisioned a Vietnamese-style fresh roll filled with shrimp and veg, and I love how it turned out: delicious, light, healthy and full of freshness.
