The story goes that we celebrated on Christmas Eve because my great grandmother didn’t want to get up early and go anywhere on Christmas morning. Great as a stand alone wilted lettuce salad, or great as a foundation for adding optional toppings like nuts, cranberries, grilled onions, boiled eggs, chicken, swap out vinegar for a red wine vinaigrette, etc., or swap the lettuce for spinach or mixed power greens. Healthier option: heat canola or olive oil in a pan, cooking onions, garlic, etc, add in the vinegar/sugar and a small portion (or none) of the bacon drippings, and pour over greens to wilt.A dedication - Be Like Mike Chocolate No-Bake Cookies
This is a family favorite, easy to do with kids, and quick! Next to Girl Scout cookies (thin mints and samoas!), Mike loved chocolate, no-bakes, holiday traditions, and family. He was an ally for social injustice, equity rights, and adopted a local squirrel outside his home - it would come inside to visit regularly, wander around, eat nuts he'd leave out for it, and wander away to return later. Mike understood life, a good life, is about relationship and choice.
