Sheet Pan Gnocchi with Veggies and Pesto
This is a Ree Drummond recipe that I saw on the Today Show. It's very versatile. You can use different veggies as you like - add green beans instead of asparagus, or toss at the end with some rotisserie chicken or shrimp, etc. Also, when cooking for one or two people, I like to make just enough for that meal. I save the pesto/oil sauce in the fridg, have some pre-chopped veggies ready and the extra gnocchi in their own container. They I toss just what I want for that one meal and can enjoy the fresh roasted veggies and gnocchi each meal (instead of trying to reheated yesterday's roasted veggies which wouldn't be as good)! A great way to get a mega dose of veggies in a meal. Sometimes I skip the parm cheese and/or the basil leaves, but I highly recommend the drizzle of balsamic glaze. The pesto and balsamic glaze are so yummy together! Use some non-stick aluminum foil to make clean up as easy as this recipe is! Submitted by: "Sheila Jessen"
