In later years Grandma had to delegate the cooking to someone else, but she always made sure that whoever the 'resident chef' was, that person cooked the favorites of whoever happened to be visiting. There were certainly lean years in the memories of Grandma's nine kids, but they all agree they never went hungry.
Since the first edition of the Cole Family Cookbook was printed, the family has grown. Now there are great-great-grandkids with favorite recipes to share. Coles love to cook and they love to eat. Here's to more great recipes and the wonderful memories they create!

I created this recipe when the garden was producing so much yellow squash I was thinking about dropping it off on neighbor's doorsteps and then running. I was surprised to find several yellow squash soup recipes online, but none had the mix of ingredients I had in my pantry, or that sounded quite right. So I mixed and matched several recipes to come up with this one, which has become a favorite in my household and at potlucks. This recipe makes a lot - a big soup pot full, and is good leftover. I grew up on this recipe which was handed down from my Grandmother. Cayla had never had homemade banana pudding until she came to live with us. I made this for her and she was instantly hooked. When I was living in Austin we found a pizza joint that made a serious mushroom pizza. It became our go-to comfort meal on weekends (and weekdays). Unfortunately, it closed less than a year after opening and for the next year I found myself reminiscing about this pizza until I finally decided I needed to figure out how to make it. It is a wonderful combination of smokey, tangy, sweet, and savory. For the dough I like to use a recipe off of finecooking.com that I make the night before and leave in the refrigerator to ferment. It can be kept for days in the refrigerator or frozen for much longer. I first had this Chili when I was having my Aunt Andree's estate sale. That was in the fall of 2009. The weather was very cool for that time of year. That morning my cousin Sue added Baileys Irish Cream to my coffee, and a lady named Thelma came with a large pot of her chili. That's how I remember that day. My mom first served me oven roasted asparagus that Aunt Jackie taught her to make. They were delicious! I don't always have fresh asparagus, but almost always have onions and some other vegetables that will roast in an equal amount of time, such as green bell pepper and zucchini. They are much heavier than pancakes you may be used to, but I love the texture and the nutty whole wheat flavor. We have enjoyed this recipe every summer for the last 35 years. Leftover freezes creamy and easy to scoop. Can also be used as a great base recipe for adding fresh strawberries or peaches. To do so, just add 2 cups fresh fruit approximately half way through freezing. This recipe was used as a base recipe for Chocolate Chunk Cappuccino ice cream served at 2013 Cole Reunion.
