TIRAMISU CAKEWhile I enjoy classic Tiramisu, it starts with making GF ladyfingers. Frankly, this cake is much easier, and I still get the flavors.
BUFFALO CHICKEN WRAPSMy grandson, David, takes lunch to school every day because since he has Celiac, school lunches are not safe for him. Wraps are one of the lunches we make because it is a little different than a sandwich, and are delicious.
SALMON SPINACH WRAPSWhen my son, Michael lived in Seattle we visited him every year, and I fell in love with the Pacific Northwest and Salmon. These salmon wraps are one of the ways we enjoy this treat.
GRILLED MEDITERRANEAN CHICKEN WITH VEGGIESDuring the dog days of summer I love salad meals that can cooked on the grill offering warm meat with cool greens. This salad has a Mediterranean flair that is delicious.

GREEK SALADGreek salad is wonderful served with Greek food, but is delicious served as a light meal by itself.
CHOCOLATE WALNUT BROWNIESBrownies are delicious and can be varied by using caramel, cream cheese, or peppermint.
PEACH COBBLERSometimes unexpected guests arrive and I want to serve dessert and coffee. These ingredients are always on hand, so this is a very tasty dessert than comes out of oven in under an hour.
BEEF STEAK FAHITASFahitas were popular in every Mexican and TexMex restaurant in Oklahoma when we lived there. So we had to learn how to make them at home. The only difference is that we cannot use flour tortillas, so we sub corn tortillas and they are delicious.
VANILLA WAFERSThese vanilla wafers are great to keep on hand to use in making banana pudding, they also are great to use for making a cookie pie crust.
BANANA PUDDINGThis dessert was off limits until I discovered how to make GF vanilla wafers. Now we enjoy it regularly.
VANILLA CUSTARDThis vanilla custard is naturally GF and delicious. I use it frequently for puddings and pie fillings.
CHICKEN PICCATAPiccata made with either chicken or veal is an Italian classic. We enjoy chicken piccata in warm weather because it is a lighter meal than many Italian meat and pasta dishes, but still so good.
SALTED CHOCOLATE AND CARAMEL PRETZEL BARSSalted chocolate and caramel is all the current rage. You won’t be disappointed.
GRILLED HERBED CENTER CUT PORK LOINWe purchase whole pork loins from the grocery at an economical price, which can then be cut into roasts, chops, and kebabs. We particularly enjoy this recipe in the summer on the grill when we have all the fresh herbs in our garden. Very tasty.
AU GRATIN POTATOESAu Gratin Potatoes were always on our family holiday tables. When David was diagnosed with Celiac, there went a favorite dish. After I developed this dish (actually by accident) we decided that even if we could go back to making it the way we did preCeliac, we wouldn’t. The potatoes are that delicious.
SCALLOPED POTATOES (DF OPTION)Scalloped Potatoes are served often for Sunday Dinner. When David was diagnosed with Celiac Disease, we no longer served them until I developed this GF recipe. The potatoes are so good that we will never add the wheat flour even when serving them to non Celiac guests.
BLUEBERRY BUCKLEBlueberries are a favorite in our family We pick gallons of them every summer at the Walrond’s in Castilian Springs. This makes a wonderful breakfast coffee cake, but is just as good served as dessert topped with ice cream. .
SOUTHWEST RICE PILAFThis flavorful Southwest rice pilaf is a terrific addition to Mexican or Southwest flavored meats Or add 1 lb. ground beef, browned and you have an easy dinner.
PHILLY CHEESESTEAK HOAGIEA great recipe to feed a crowd. Maybe not altogether authentic, but easy and very tasty.
GF HOAGIE BUNThese buns are so easy to make and are so much better than the buns we can buy at the grocery. We keep them in our freezer all the time.
CHOCOLATE POTS DE CREMEThis dessert is easy, but doesn’t look or taste it. Use a good chocolate when making Chocolate Pots de crème, because you really taste the difference. Wonderful topped with whipped cream and fresh red raspberries.
TRES LECHE CAKETres Leche very popular in Latino countries. And it's become very popular worldwide. Tres Leche means three milks because the cake is soaked in three types of milk. A cool, delicious summertime treat.
LIGHT SOUTHWEST SALADWhile I love the Southwest salads that contain black beans and corn, sometimes with a heavier meal you want a lighter salad. This salad is just right.
POTS DE CREME DAIRY FREEPots de crème are the perfect dessert for an elegant dinner party. I was given some Wedgewood demi tasse cups from England a number of years ago and while we rarely drink espresso, the cups are wonderful for serving this delicious dessert. .
CHICKEN WITH SPINACH ARTICHOKES AND PASTAThis recipe is so easy to make, but special enough even for company. A favorite with the family.
GRILLED CARAMELIZED PORK MEDALLIONSPork Tenderloin is always a favorite in our household. This is a delicious grilled pork tenderloin with a sweet and savory glaze. Wonderful with rice or pasta.
HOW TO COOK JASMINE RICEOur family enjoys Asian dishes which are usually served with fluffy Jasmine rice. I always purchase my Jasmine rice from the Asian market because it is fresher and has nothing added to it.
BLEU CHEESE DRESSINGBlue Cheese dressing is a favorite I enjoyed at restaurants when I was young. I still love it, this fresh version is so much better than the bottled stuff. This recipe contains mayo as well as buttermilk and sour cream.
THOUSAND ISLAND DRESSINGThousand Island Salad Dressing originated in the resort areas of Thousand Islands New York, in the Northern most areas of the state and a vacationers paradise last century. Still loved today, this recipe is very close the original version.
STRAWBERRY CRUMB BARSWhen fresh strawberries are in season, or in the dead of Winter when the market has strawberries that look good, we enjoy these delicious bars.
HOW TO MAKE A COOKIE PIE CRUSTFor cream pies, French silk pie, and Chess pie, our family prefers a cookie crust. This is really good.

Since my grandson, David was diagnosed with Celiac Disease and numerous other food allergies when he was a toddler 14 years ago, I have been reworking recipes and creating recipes for him and my friends in the National Celiac Association of TN. This cookbook is for them.
This cookbook is for my grandson, David, who was diagnosed with Celiac disease at 20 months of age. Someday he will be an adult with a family of his own, I want him to have the healthy, gluten free recipes created by his grandma for him to enjoy with his family. We also want to share them with you.
When my grandson, David, was diagnosed with Celiac Disease at a very young age I immediately started cooking gluten free. Before long I started converting our family favorite recipes to gluten free versions and I began to realize that he would need to have these recipes, so I started writing a cookbook. When I started "Grandmas Gluten Free Goodies" my customers also began asking for the recipes. GOING GLUTEN FREE AND LOVING IT Cookbook series was born. I hope you enjoy this month's recipes.
Grandmas Gluten Free Goodies makes two meals a week including entree, side, salad, and dessert for our meal service customers to choose boxed meals for 2 or family meals. The customers requested many of the recipes, so each month we publish the recipes for that month's meals to cook at home. We hope you enjoy them.
Grandmas Gluten Free Goodies offers two gluten free (and other dietary restrictions) meals each week in the middle Tennessee area primarily to those with Celiac disease. I have been developing GF recipes and converting family recipes to GF since my, then toddler, grandson was diagnosed with Celiac 14 years ago. The GOING GLUTEN FREE AND LOVING IT series of cookbooks were created so when my grandson, David is an adult he will be able to cook for himself the same food he grew up enjoying.
