My grandson, David, takes lunch to school every day because since he has Celiac, school lunches are not safe for him. Wraps are one of the lunches we make because it is a little different than a sandwich, and are delicious.SALMON SPINACH WRAPS

Fahitas were popular in every Mexican and TexMex restaurant in Oklahoma when we lived there. So we had to learn how to make them at home. The only difference is that we cannot use flour tortillas, so we sub corn tortillas and they are delicious.VANILLA WAFERS

We purchase whole pork loins from the grocery at an economical price, which can then be cut into roasts, chops, and kebabs. We particularly enjoy this recipe in the summer on the grill when we have all the fresh herbs in our garden. Very tasty.AU GRATIN POTATOES
Au Gratin Potatoes were always on our family holiday tables. When David was diagnosed with Celiac, there went a favorite dish. After I developed this dish (actually by accident) we decided that even if we could go back to making it the way we did preCeliac, we wouldn’t. Scalloped Potatoes are served often for Sunday Dinner. When David was diagnosed with Celiac Disease, we no longer served them until I developed this GF recipe. The potatoes are so good that we will never add the wheat flour even when serving them to non Celiac guests.BLUEBERRY BUCKLE
Blueberries are a favorite in our family We pick gallons of them every summer at the Walrond’s in Castilian Springs. This makes a wonderful breakfast coffee cake, but is just as good served as dessert topped with ice cream. .SOUTHWEST RICE PILAF
