Chicken TeriyakiWe love Asian foods. This chicken Teriyaki comes together in only 20 minutes with ingredients that are always in the pantry. And it is sooo good.
MEATLOAF STUFFED WITH CHEESEWe enjoy meatloaf, and this is a fun take on a classic recipe. Sometimes we add bacon on top and use cheddar; sometimes we put sautéed mushrooms on top and use swiss; sometimes we put sauted onions on top and use gruyere…you get the idea.
ROASTED CARROTS AND PARSNIPSCarrots and parsnips are natural partners. Our family loves these root vegetables roasted. You can change the seasonings to mix things up a bit.
ASIAN CHOPPED SALAD WITH MANDARIN ORANGESWe love Asian chopped salads. We enjoy it topped with grilled chicken or have it on the side with Vietnamese fried spring rolls. Yum!
MANDARIN ORANGE FLUFF PARFAITOrange fluff was my mother’s recipe for holidays. It makes a light, fluffy dessert that is simple to prepare.
CARAMEL SAUCEThis caramel sauce is so easy to make and so good, I never buy store bought. Besides when you make it yourself, you know it's GF.
CARAMEL APPLE CAKEWhen apples are harvested, I love to make this caramel apple cake to celebrate Autumn.
BRATHENDI (BAVARIAN ROAST CHICKEN)We love to serve this spit roasted chicken during Oktoberfest . The spice mixture turns out a flavorful bird with crisp skin.
LATKES (POTATO PANCAKES)When I was in college a long time ago, I befriended some fellows in a Jewish fraternity. Sometimes I joined them on the Jewish feast days and there I was introduced to Latkes served with applesauce and sour cream. Really tasty.
JAGERSCHNITZEL (BREADED PORK CUTLETS) WITH MUSHROOM SAUCEWhen I lived in Cincinnati, my next door neighbors were from Munich, Germany and we became good friends. Since there is a huge German influence in Cincinnati they have a marvelous Oktoberfest celebration where I tried Jagerschnitzel. My German friends gave me the recipe and I have been making it and other German specialties ever since, GF of course.
SPATZLEOur family absolutely adores Spatzle served with German food, such as Goulash or Saurbraten.
GERMAN COLESLAW (ALSO KNOWN AS FREEZER SLAW)When I lived in Ohio I had a lovely raised vegetable garden. One year I purchased broccoli plants, they grew quite large and I was expecting them to sprout a stalk any minute. My Dad was visiting and I showed him my beautiful big broccoli plants. He replied “I don’t see any broccoli, but you have some fine cabbages that are ready to harvest.”. Since I had 12 cabbages, I made this slaw which also freezes well.
GERMAN BLACK FOREST CAKEThis is the German recipe for this cake. It isn’t as sweet as the American version, which uses cherry pie filling; instead uses fresh Bing cherries or canned dark cherries for the filling and flavors it with Kirsch. Our family loves both versions of Germany’s famous Black Forest Cake.
HOT FUDGE SAUCEFudge sauce is so addicting and so easy to make with simple pantry staples, why would you ever buy store bought sauce full of chemicals?
PIE PASTRYI tried every GF pie pastry recipe I could find, but wasn't happy with the result. Finally, I went back to my original pie pastry recipe from "Baking with Julia" and converted it to GF by replacing the wheat flour with GGFG Baking mix which has the percentages of protein and starch that most closely resembles wheat flour, and adding zanthum gum and an egg to approximate the properties of gluten in wheat flour. Finally, a pastry that has the flavor and the flakiness of old fashioned pie pastry but is GF.
APPLE DUMPLINGSApple dumplings have flavor similar to apple pie, but are made with a whole apple and a delicious syrup in which they are baked. An Autumn favorite.
CHICKEN ROASTED WITH TOMATOES ARTICHOKES AND MUSHROOMSWe love roasting meat and veggies together, everything mingles and caramelizes and creates wonderful flavor.
HOWTO COOK JASMINE RICEOur family enjoys Asian dishes which are usually served with fluffy Jasmine rice. I always purchase my Jasmine rice from the Asian market because it is fresher and has nothing added to it.
SAGE AND APPLE PORK ROASTWe love serving this Pork Roast especially in Autumn when apples are at their peak. I like to serve roasted apples to eat with the pork roast.
ROASTED SWEET POTAOTES, BRUSSEL SPROUTS, AND APPLESThis recipe is one you’ll turn to when leaves begin to turn color and the air begins to feel cooler. Roasting veggies like this caramelizes them and brings out their natural sweetness.
SPINACH SALAD WITH HARDCOOKED EGGS, RED ONION, AND BACON BITSThe flavors of fresh spinach with hardcooked eggs, red onion, and bacon bits topped with sweet onion vinaigrette and sharp cheddar is so good.
TOFFEE BARSToffee is one of the candies I make at Christmas time that we really enjoy. The rest of the year we can enjoy the flavor of toffee in these tasty bars.
ASIAN CHICKEN RICE BOWLWe love Asian food and this recipe is great to use leftover chicken. Using a coleslaw mix from the grocery makes it super easy and fast.
SPAGHETTI WITH BOLOGNESE MEAT SAUCEThis is traditional Italian Bolognese meat sauce created in the city of Bologna, Italy (they even have it trademarked, so no other meat sauce can be called Bolonese except this one). Wonderful over spaghetti, but also a component of many other dishes.
CRANBERRY CARROT LAYER CAKEI enjoy traditional carrot cake, but the addition of orange zest and dried cranberries take this Autumn dessert over the top. A real favorite.
FROSTED BROWNIESBrownies are delicious and can be varied by using caramel, cream cheese, or peppermint.
CHICKEN FAJITASHaving lived in the Southwest for so long, we love Mexican food. Chicken fajitas are so easy and tasty we enjoy them frequently.
COTTAGE PIEThis is a dish I enjoyed in Ireland. Made with lamb it is called Shepherd’s pie, made with beef it is called Cottage pie. Either way, it is great comfort food.
SOUTHWEST CHOPPED SALADA simple salad with flavors of the Southwest. Wonderful with Mexican or Southwest main dishes.
AUTUMN CHOCOLATE CUPCAKESMy grandson David, is now 16 and no longer goes trick or treating. But he still enjoys having friends over to roast hot dogs over the fire pit and having these cupcakes.

Since my grandson, David was diagnosed with Celiac Disease and numerous other food allergies when he was a toddler 14 years ago, I have been reworking recipes and creating recipes for him and my friends in the National Celiac Association of TN. This cookbook is for them.
This cookbook is for my grandson, David, who was diagnosed with Celiac disease at 20 months of age. Someday he will be an adult with a family of his own, I want him to have the healthy, gluten free recipes created by his grandma for him to enjoy with his family. We also want to share them with you.
When my grandson, David, was diagnosed with Celiac Disease at a very young age I immediately started cooking gluten free. Before long I started converting our family favorite recipes to gluten free versions and I began to realize that he would need to have these recipes, so I started writing a cookbook. When I started "Grandmas Gluten Free Goodies" my customers also began asking for the recipes. GOING GLUTEN FREE AND LOVING IT Cookbook series was born. I hope you enjoy this month's recipes.
Grandmas Gluten Free Goodies makes two meals a week including entree, side, salad, and dessert for our meal service customers to choose boxed meals for 2 or family meals. The customers requested many of the recipes, so each month we publish the recipes for that month's meals to cook at home. We hope you enjoy them.
Grandmas Gluten Free Goodies offers two gluten free (and other dietary restrictions) meals each week in the middle Tennessee area primarily to those with Celiac disease. I have been developing GF recipes and converting family recipes to GF since my, then toddler, grandson was diagnosed with Celiac 14 years ago. The GOING GLUTEN FREE AND LOVING IT series of cookbooks were created so when my grandson, David is an adult he will be able to cook for himself the same food he grew up enjoying.
