CHICKEN DIVANOur family often has roast or rotisserie chicken. Chicken Divan is one of my go-to recipes for using the leftover chicken. Our family loves it!
TAMALE PIEThis is a great weeknight recipe. The family can add their own toppings of salsa, sour cream, shredded lettuce, guacamole, etc.

BUTTERSCOTCH BARSOur family doesn't eat dessert during the week, but enjoy a variety of desserts on weekends. When it's been a tiring, busy week these go together quickly and the family loves them.

STICKY ROTISSERIE STYLE CHICKENThis is a delicious rotisserie style chicken that cooks in a low oven while you are free to do something else. The result is a flavorful, moist, and tender chicken the family adores.
ROASTED POTATOESThis method of steaming, then roasting the potatoes results in perfect roasted potatoes.
APPLE THYME STUFFED PORK CHOPSStuffed pork chops are an Autumn favorite in our house. With a calorie count of 350 these pork chops taste wonderful without being too heavy. Perfect for early Fall.
WILD RICE PILAFI love wild rice pilaf and used to purchase Uncle Ben’s all the time. But after Celiac I couldn’t find any wild rice mixes, so we make our own that is GF and delicious.
APPLE COBBLER MADE WITH APPLE PIE FILLINGThis is an easy, but so delicious apple dessert. I enjoy using my homemade freezer pie filling to make a dessert the family loves. Great served with ice cream or whipped cream.
APPLE PIE FILLINGIn the Autumn when apples are harvested I like to purchase bushels of apples to eat and to make into apple pie fillings for the freezer. With apple pie fillings and pie dough in the freezer and cake mixes in the pantry; it is as easy as the proverbial "apple pie" to whip up an apple pie or apple cobbler.
DJON ROSEMARY CHICKENWe love this easy weeknight chicken dish flavored with mustard, fresh rosemary is a must.
ROASTED WHITE AND SWEET POTATO MEDLEYThese roasted potatoes are so versatile. We love them with grilled and roasted meats.
ITALIAN MEATBALLSOur family loves these Italian meatballs simmered in homemade marinara and served with spaghetti sprinkled with freshly grated parmesan. YUM!
MARINARA SAUCEThis homemade marinara sauce is so flavorful and easy to make, why ever use the jarred stuff?
TRIPLE CHOCOLATE MAGIC BARSWe love these ooey, gooey triple chocolate bars. David’s favorite cookie!
PINEAPPLE UPSIDE CAKEA traditional pineapple upside down cake, but gluten free. Very good served with whipped cream.
TRIPLE CHOCOLATE BARS. The family loves chocolate chip cookies, these bars taste the same, but are faster and easier. David and his friends love them.
CREAMY WHITE CHICKEN ENCHILADASWhile we love enchiladas with typical red enchiliada sauce, there is just something special about these creamy white chicken enchiliadas.
SOUTHWEST CHOPPED SALADA simple salad with flavors of the Southwest. Wonderful with Mexican or Southwest main dishes.
DRUNKEN PORK TENDERLOINThis is my go-to recipe for a delicious pork tenderloin dinner. The red wine (I usually use a Merlot) flavors the pork beautifully and the gravy mix makes a perfect gravy for mashed potatoes.
MASHED POTATOES WITH DF OPTIONMashed potatoes are such comfort food and a must with dishes like pot roast or fried chicken. This recipe can be made with skin on or off as you prefer.
PEAR TART WITH DAIRY FREE OPTIONPears are a delight in the Autumn when fresh. This dessert makes the most of them.

Since my grandson, David was diagnosed with Celiac Disease and numerous other food allergies when he was a toddler 14 years ago, I have been reworking recipes and creating recipes for him and my friends in the National Celiac Association of TN. This cookbook is for them.
This cookbook is for my grandson, David, who was diagnosed with Celiac disease at 20 months of age. Someday he will be an adult with a family of his own, I want him to have the healthy, gluten free recipes created by his grandma for him to enjoy with his family. We also want to share them with you.
When my grandson, David, was diagnosed with Celiac Disease at a very young age I immediately started cooking gluten free. Before long I started converting our family favorite recipes to gluten free versions and I began to realize that he would need to have these recipes, so I started writing a cookbook. When I started "Grandmas Gluten Free Goodies" my customers also began asking for the recipes. GOING GLUTEN FREE AND LOVING IT Cookbook series was born. I hope you enjoy this month's recipes.
Grandmas Gluten Free Goodies makes two meals a week including entree, side, salad, and dessert for our meal service customers to choose boxed meals for 2 or family meals. The customers requested many of the recipes, so each month we publish the recipes for that month's meals to cook at home. We hope you enjoy them.
Grandmas Gluten Free Goodies offers two gluten free (and other dietary restrictions) meals each week in the middle Tennessee area primarily to those with Celiac disease. I have been developing GF recipes and converting family recipes to GF since my, then toddler, grandson was diagnosed with Celiac 14 years ago. The GOING GLUTEN FREE AND LOVING IT series of cookbooks were created so when my grandson, David is an adult he will be able to cook for himself the same food he grew up enjoying.
