Spiced Pumpkin ButterTurn pumpkin puree into spiced pumpkin butter with the delicious fall-flavored canning recipe. While you can wrap jars of this pumpkin butter recipe up for gifts, make sure to save one or two for yourself to spread on toast or mix into oatmeal.
Curry Winter Squash SoupWinter Squash is unique in the garden because it stores well allowing us to enjoy its sweet flavor all the way through winter. It is also tremendously popular with kids because it is so sweet. This soup will make a wonderful, warm treat for you and your kids on a winter's day, when other garden produce is in limited supply. Older kids can chop and prepare vegetables, while kids of all ages can help measure spices, scoop out winter squash flesh, stir the soup and use the blender.
Smashed Kale Salad RecipeThis recipe comes from Life Lab. Kids love tearing up kale and smashing it in a Ziploc bag with lemon and avocado! There is something oddly therapeutic about it. This recipe makes a great salad for the family.
Citrus Kale SaladThis zingy citrus kale salad is nutrient-dense and kids love smashing it in a ziplock bag!
Power SnackThis recipe is great to teach healthy eating habits and also gives kids the opportunity to create what they want to eat. This snack follows the Power Plate guidelines. Power Snacks contains at least one ingredient from each of the five food groups.
Kale Pesto Pasta RecipeYour whole family is sure to love this recipe! Kale is loaded with antioxidants, vitamins, minerals, fiber, and potassium. Studies show it helps with diabetes, cancer, and heart disease prevention and promotes bone, eye, hair, skin, and digestive health.

Mom’s Irish Soda Bread SconesThese scones are sweet and perfect with coffee and tea, or an on-the-go snack. This recipe was submitted by a Mira Vista Parent Meg Pitts!
Dutch babyAs a kid, my dad was always in the kitchen cooking up delicious meals. One of my favorites is dutch babies. It’s a large, fluffy pancake that can be served with fresh ricotta, berries, fruit, maple or ginger syrup- the options are endless! It’s perfect for a lazy Sunday breakfast on the porch. What I love about this recipe is it’s so easy and takes about 5 minutes to prepare. Just throw all the ingredients in a blender and pour into a skillet or muffin tray with sizzling butter and voila 25 minutes later you have a little slice of heaven on your plate. This recipe was submitted by West County Digs Communication Specialist Elena Rossi.
Three Sisters SaladThe "three sisters" are corn, beans, and squash (like zucchini). Native Americans planted them together in the garden because they help each other grow. The "three sisters" also work together to give your body a nutritious meal.
Cabbage apple Yogurt SaladThis salad is perfect for the whole family year-round. Crunchy cabbage with crisp apples, celery, and nuts, make this salad nutritious and delicious!
Barley with Roasted Carrots, Snow Peas, and Lemon-Yogurt SauceTender barley with sweet pan-roasted carrots and a tangy yogurt-based sauce makes this recipe a go-to vegetarian dish. This recipe was submitted by a Mira Vista School parent Kirsten Meder! Photo courtesy of Daily Mediterranean Diet.
Zucchini Lasagna"My mom made lasagna a lot growing up but I wanted to create a healthier, meatless, but still tasty, version. With a surplus of zucchini in the garden and a lack of noodles in the kitchen, this version was born and quickly became a favorite. I love how adjustable it is based on what we have in the garden/house as well." This recipe was submitted by a Mira Vista School parent Kirsten Meder.
Pickled Fava BeansEasy Homemade Pickled Fava Bean Recipe! Fava beans can be added to pasta dishes or salads or roasted for a snack. They have a great source of fiber, protein, and micronutrients. When you till Fava bean plants back into the soil they improve soil fertility by adding more nitrogen.
