I got this recipe from Becky Ross, The Freedom Chef. She contributed it as part of "Gluten Free Baking With KitchenAid" Month. This was Recipe #2. Now, the recipe below may seem to be long process, but it's not, and it's super fun to do with the kids! This recipe is vegan. It is also gluten free, dairy free, Egg Free, Nut Free, Soy Free and Corn Free. There is No Sugar Added! Plus it's Low Carb, High Protein, and rich in Good Fats. You can even make your own natural food coloring! These are a hot item for Easter, and no one will ever know that they are healthy!"Gluten Free Flourless Chocolate Nutella Cake
This was the Recipe #1 in the "Gluten Free Baking With KitchenAid" event. This is my gluten free blend of Nigella Lawson's recipe out of her phenomenal cookbook - How To Be A Domestic Goddess. If you don't have a copy of this book - get one! It is ALWAYS my first stop for a delectable dessert recipe. When I got the publishing permission from Hyperion and Ms. Lawson herself, I was tickled to bits! Instead of using a jar of nutella in this recipe, I made homemade chocolate hazelnut spread using the Elana's Pantry recipe. Elana Amsterdam is one of my favourite gluten free bloggers, and this healthier nutella recipe is quick and easy. Thanks Elana! The rest of the recipe is pretty self explanatory. Just make sure you don't over mix or over beat the egg whites, gently gently fold in the egg whites and chocolate into the mixture. I will warn you that this cake is DEADLY ADDICTIVE! It is also VERY RICH! A little goes a long way! I got this recipe from Kelly Courson over at Celiac Chicks. This was Recipe #5 in the "Gluten Free Baking With KitchenAid" event. These "peanut butter love bars" are SOOO easy. You just need four basic ingredients and about twenty minutes of your time, and you have a quick easy gluten free treat the whole family can enjoy. It just doesn't get any easier than this little idea. It is like diving into a VAT of peanut butter! OH! My DREAM! As Kelly says in her original post, you can keep these love bars simple, or jazz them up with some chocolate or jam. I actually thought it would be wonderful to do all sorts of variations with different nut butters, fruits and sweeteners! Perhaps a version with almond butter, chocolate, cherries and agave? YUMMO! **Or try Be Free Bakers version that she shared in the comments for those allergic to peanuts and eggs: She used 2T chocolate flavored flax meal + 5T boiling water (set for 5 mins), almond butter instead of peanut butter, and 3/4 cup honey instead of a whole cup. So, through these delectable gluten free chocolate brownies, we might just get a tiny taste of some of the magic that comes out of Valentina's kitchen. I modified her original recipe to make it dairy free, and used Earth Balance and dark vegan chocolate. But you could always use butter and regular chocolate. These brownies were moist and very chocolatety! Juuuust how I like them! The coconut flour is fabulous in this recipe because it blends SO with chocolate! As Valentina says in her original blog post, "Coconut flour is also high in fiber and has a nice amount of protein. It is a very absorbent flour, so I use quite a bit less than I would all-purpose flour. And it does a great job thickening the batter without drying out the final product." Not only is it moist and flavourful, but it is gluten free, dairy free, egg free, nut free and soy free. I could attempt to describe how incredible this vegan pumpkin bread is, but instead I will quote Alisa's description of it, which more articulately does this recipe justice: "This pumpkin bread has a wonderfully tender (yet cohesive) crumb that hits the sweet spot in texture, not too moist, not too dry. I didn’t get out of control with the sugars, so though it is dessert-like, it’s also passable as a brunch-style treat. We loved snacking on it plain (especially when warm), or even slathered with some dairy-free margarine or nut butter." Beth says, "inspired by a recipe by Dorie Greenspan and a crop of fresh, local blueberries, this magnificent cake is as pretty as it is luscious. I serve it on a glass cake stand with vanilla glaze draping over the crowns of the cake, and a glint of the fruit peeking from the frosting’s edges. When blueberries are not in season, I use frozen blueberries, raspberries, or chocolate chips." If that description doesn't make you grab for your spatula, Beth says, "I've seen grown men cry over a bite of this, but not too many tears or the cake will get soggy!" LOL! I got this recipe from Carla Spacher from Gluten Free Recipe Box. This was recipe #22 in the "Gluten Free Baking With KitchenAid" event. This recipe is SUPER easy and absolutely delicious! I served this vegan coconut whipped cream with some raw nuts and seeds, chopped bananas, shaved coconut and maple syrup for a decadent parfait. But I couldn't help but wonder as I looked at the photo Carla gave me of that secret yellow cake, "Is she saving that amazing looking cake for a future cookbook?" Let's keep our eyes peeled for THAT! I got this recipe from Carrie Forbes from Ginger Lemon Girl. This was Recipe #23 in the "Gluten Free Baking With KitchenAid" event. So let's sample one of Carrie's incredible recipes. Let me say right out of the chute that these gluten free vegan chocolate muffins are VERY hard to quit eating! So just know that from the very beginning. Vegan muffins that have chocolate in them? I am IN every day of the week and twice on Sundays; and if Ginger Lemon Girl created the recipe, count me in forever! I joke, but these muffins really are that good. These vegan muffins taste amazing and are also gluten free, dairy/casein free, soy free, corn free, egg free, rice free, and yeast free. You gotta love that! Now, please note that these muffins are a bit crumbly because they do not contain any xanthan gum or guar gum. You can add 1/2 teaspoon or 1 teaspoon for a more traditional muffin texture, which is what I did. Also, for the best results, allow these muffins to rest on a wire rack to cool completely. Carrie says, "The taste of these muffins actually reminds me of an Oreo cookie. Deeply chocolate, with just a touch of sweetness." Now that revelation might get in the way of your ability to wait for these muffins to cool completely before diving in. I must confess, Scott and I burnt our tongues sampling these babies! LOL! I got this recipe from This was Recipe #28 in the "Gluten Free Baking With KitchenAid" event. These simple little truffle bites have a wonderful balance of sweet and savoury with spicy notes reminiscent of Autumn. These are rich, decadent, sweet and satisfying. Lisa says that, "the center of this amazing truffle is a rich combination of sweet and savory that's reminiscent of a thick spice cake... brown rice syrup provides the sweetness, graham cracker crumbs give it body, cinnamon, nutmeg and cloves evoke autumn, and mashed sweet potatoes give it a pumpkin-y flavor and slight seasonal orange shade." Yes! Yes! and.......YES! Lisa rolled her truffle bites in powdered sugar and miniature chocolate chips. But I rolled mine in unsweetened shredded coconut and they were AMAZING! I got this recipe from Jennifer Ward at Be Free Bakers. This was Recipe #29 in the "Gluten Free Baking With KitchenAid" event. These banana chocolate chip muffins are TO DIE FOR! They are ultra moist, and packed full of flavour! These muffins are gluten free, soy free and vegan (if you use almond milk), corn free (use guar gum in place of xanthan gum and choose a glycerin based vanilla extract) and nut free (use soy or rice milk). For a flavour variation you could add nuts or berries in place of the chocolate! You don’t have to use the brands Jen recommends and uses, but she wanted to emphasize that using quality brands will get you the best results. Jen says these muffins cook up absolutely gorgeously with cast iron, but using regular muffin tins work well too. ENJOY! These are very hard to quit eating. I got this recipe from Kalinda Piper from Wheat Free Meat Free. This was Recipe #31 in the "Gluten Free Baking With KitchenAid" event. These crackers have a delicious flavour and texture using a mixture of almond meal, sorghum flour, and potato starch, and binding it all together with flaxmeal. Aren't flaxseeds a gift from the Gods in the gluten free vegan world?! Just AMAZING! If you have never made crackers before, give it a go! You will be surprised at how easy it is! Kalinda's crackers are wonderful with vegan dips and spreads, or with a delicious salad or soup. Kalinda says about rolling the crackers, "A lot of cracker recipes suggest that you roll the dough out between two sheets of parchment. I found that to be a big pain. But it might help if you’re having problems with dough sticking to your rolling pin. Also, don’t be afraid to use your hands to help shape the dough and patch up cracks. If you have coarse salt, a little sprinkle on top before baking would be nice." I did roll mine out between two sheets of paper because I just found it quicker and easier. But either way works!
