Quesadillas or Tacos
Tostada de Pollo (Chicken Tostada)
Pastel de Cebollas
Quesadillas or TacosIf I have to whip up a meal for my family or myself – dinner, lunch or breakfast – I make quesadillas (or flip the ingredient order and they are tacos); all Duda family members, and guests, like them. They include all food groups, and I can use most any leftover from our kitchen. This was my “go-to meal” when I was single…when I learned that my future husband’s was burritos, I knew we were meant for each other. (I used to live in Mexico, and he spent significant time in Latin America while he was growing up). Liz D.
Caribbean BananasMy mother served this dessert recipe, from a Cuban American family friend, at many of her dinner parties in Latin America. Margaret W.
Flan QuesilloI love flan! This very easy recipe makes a tasty variation. My best friend’s mother gave my mother the recipe when we lived in Tegucigalpa, Honduras. Margaret W.
Pastel de CebollasA fabulous friend of my mother’s would serve this onion pie during afternoon tea in Buenos Aires, Argentina – a favorite savory treat. Margaret W.
Tortilla EspañolaI first had this kind of “tortilla” when I lived in Madrid as a teen and have made this family recipe countless times since. Along with jamón serrano, it brings back happy memories of Spain. Margaret W.
Chilean EmpanadasSmall empanadas were often party hors d’oeuvres when I was a child in Argentina. Empanadas are time consuming to make because the dough can be tricky, but they’re delicious – well worth the effort. Margaret W.

It empowers everyone to create, market and distribute a cookbook as both a web-based eBook and an iPad app. It also makes it incredibly easy for home cooks to discover and use amazing grassroots cookbooks they won't find anywhere else. Since 2012, we've published thousands of cookbooks authored by home chefs, nonprofit organizations, clubs, brands, etc. Our goal is to democratize cookbook publishing and make it easy to build an online library of amazing grassroots cookbooks.

2020 has been a year for everyone to really think about life and family while going through the worst pandemic in 100 years. Most people have been forced to stay at home during these times and wondering what else could they cook to satisfy those appetites. To help celebrate Hispanic Heritage Month this year, we thought it would a great idea to share our Hispanic/Latin inspired dishes with everyone.
