Schezhuan Fried RiceThis spicy and tangy fried rice will leaving you wanting more! If you aren't a good cook, you can still make this recipe because it is super easy! And delicious! One thing I like about this recipe is that you can switch it up and make it your own. If you don't like a particular vegetable or if you don't have it in your pantry, you can always switch it out for another.
Dalgona CoffeeDalgona coffee has taken the internet by storm! This drink originated from South Korea and involves mixing equal parts of instant coffee, hot water and sugar until light and fluffy. I used a electric beater to save time but you can also whisk it by hand if you don't have one. Just note that it will take longer. This drink is sweet yet gives you just the right amount of coffee flavor! One good this about it is that you can always adjust it. If you like your coffee strong then you can make more of the mixture. If you like less coffee, go ahead and make less of the mixture. Just make sure to use equal part of the instant coffee, hot water and sugar. Credits to whoever is the original creator!
KhichdiThis recipe is the ultimate comfort food. It is easy and quick to make and is packed with a lot of protein. And it is tasty! If you want something light, easy and tasty, then you should try this out! Note: to make this recipe vegan, use oil instead of ghee or vegan butter.

Lemonade SlushieThis is slushie is super delicious and easy to make. Even though this requires a bit of preparation, it worth a try! It is perfect for a hot summer day or really whenever you are in the mood. You can also make the ice cubes and store it up to month for slushies anytime!
Chocolate Mug CakeThis chocolate mug cake is really easy and fast to make whenever the mood hits! It is simply delicious. You can use this recipe as a base and mix in an any add-on that you would like. To make it even more fancy, you can add whip cream on top or drizzle some chocolate sauce. Really anything that you want! You can even eat the cake just as it is. To make this cake vegan, simply use unsweetened dairy free milk and skip the powdered sugar. It will be just as delicious!
Aloo Masala Bombay SandwichThis sandwich is a popular type of street food in India. I tried to make my own version at home and this is the recipe. This recipe is really easy and quick to make! All it takes is a few ingredients. The potato filling makes any boring sandwich a lot better. You can add whatever veggies that you want in your sandwich. I just included the ones I added in mine.
FrankieThis recipe is essentially an Indian burrito. It is popular among the streets of Mumbai. Although, you can't really find this being served anywhere else. So I have come to save the day! This frankie tastes just like the authentic ones but at the comfort of your own home. Like I say with all my other recipes, this is easy quick to make. And it is delicious!
Chinese BhelThis recipe is fusion between Indian and Chinese food. You would find this being served as an appetizer in any Indian restaurant. I have always wanted to make this at home and I finally did so here is the recipe. To be completely honest, this recipe is not an every day thing. It requires a lot of preparation and multi-tasking. Although, the hard work is worth it as this recipe is simply delicious! It can be fun to make with friends or on a special occasion. You can swap out some of the veggies and put ones that you would want in it. You can also play around with the amounts of schezhuan sauce, vinegar etc. to fit your palette.
Mango Ice-CreamThis 3 ingredient ice cream is quite simple and tasty. If you like mango and icecream this is just the recipe for you. And I'll be honest it does require some patience but trust me it's totally worth it. Plus, you'll be left with some great icecream to have after any meal.
Onion PakoraAre you craving an evening snack with your chai? Well, this is it. While this can serve as a great appetizer, it is especially amazing as an evening snack. It's a couple hours after lunch time but still too early for dinner; that's my favourite time to have this. For me it's home, it's something I know which is why I love it so much. And by the way this cook book also that the recipe for chai, which pair amazingly well with these onion pakora.
LassiHere in the Caribbean it is extremely hot and whenever I need to cool down this is my go to. It is so quick and easy to make, requires minimum effort but still has a great output! This drink is not something that you would typically see being served yet it is amazing! I would highly recommend that you try it out.
Red Sauce PastaThis veggie pasta is quick and easy to make! It requires minimum effort and is delicious! You can use store bought pasta sauce or you can use homemade pasta sauce. You can find the recipe for homemade sauce in this cookbook. Once again, I would recommend homemade but store bought is delicious as well. The veggies can be switched to your taste. These are just the ones I like in my pasta.
Gajar Ka HalwaThis recipe is an Indian carrot pudding recipe. This pudding takes a while to make but the wait is worth it! Luckily, it does not take a lot of effort. It just needs to be on the stove for quite some time for everything to incorporate. I would recommend serving this hot. It keeps well for about 3-4 days in the fridge. It is great if you want to impress a few guests or if you are craving something sweet. Note: to make vegan, use oil instead of ghee.
Seasoned riceThis rice while requires quite a few ingredients the outcome is great. I honestly love to eat this as is cause it's so flavorful and if you do have the ingredients, it is quite easy to make. If you are will to get these ingredients l, it is readily available at most indian supermarkets. It's something my mom makes for me and it's just great. Vegan Chia Seeds PuddingThis chia seeds pudding is delicious and healthy. All you need to do is mix up the ingredients and leave it in the fridge for a few hours or overnight. Chia seeds are a great source of omega-3 fatty acids, fiber, iron, and calcium making this a nutritious breakfast or healthy dessert. Personally, I prefer it more as a dessert but it is great for anyone who is on the go in the morning. You can add any toppings/add-ins that you like to customize this pudding to your taste which is great!
Dessert NachosThis recipe takes any boring ice cream and makes it so much better. This recipe is so quick and easy to make. Plus it is super delicious! It tastes kind of like fried ice cream that you would get in a restaurant but at the comfort of your own home.
Vegan FalafelThis recipe is a great homemade falafel. This recipe does take a bit of preparation but it is definitely worth it because it is simply delicious!
Mash potatoFirst of all who doesn't love potatoes mash potato is so easy to make and honestly doesn't take a lot of time or effort. It's such a creat comfort food and just gives you that at home feeling. Now this is a creamy mash potato but it's a great canvas to add some of your own personal taste to. Want some crunch, go ahead add some croutons. Want some spice, add some chilli flakes. Just gave fun and enjoy
Mango MilkshakeI love mango and I love milkshake so why not combine the two and make a mango milkshake. This drink is perfect for the summer heat or all round heat here in the Caribbean. This sweet-tangy drink is a great way to cool down and its tastes soo great but surprisingly easy to make. Whenever I went to India this was one of the the first things I'd want to get. When I figured out how to make it, well, I just couldn't stop.
Channa saladThis is just great all around dinner to keep it light but can also be eaten as a starter. This is so flavorful and delicious but also so easy. There is so much texture but all of them work well together. This can also be made completely different from person to person depending on your personal preference. And you can find all these ingredients right i your pantry so what's not to love.
Bean BurritoThis recipe is super quick and easy to make. It takes less than 20 minutes and is simply delicious. You can use this bean mixture as a topping for nachos or just with some chips if you don't have tortillas or if you don't really want a burrito. Get creative! Make it you own! You can add veggies of your choice and skip the cheese to make it vegan!
Pav BhajiPav bhaji is an iconic dish from Mumbai and hugely popular all over India. Pav means bread rolls. Bhaji is the marathi word for vegetables or a vegetable based dish (dry or gravy). Since both the bhaji (vegetable gravy) and pav are served together, hence the name ‘Pav bhaji‘. The taste of the pav bhaji of the streets in India is honestly so unbeatable but I think this comes pretty close.
RotiThis is just soo easy to make and tastes great with almost any indian curry. But beware the first couple times your roti may not end up looking circular or may not be as soft as it should be. If I being honest it takes practice and patience and I still don't always get circular rotis.
AppamComing from a south indian house appam is a must, especially during quarantine. I can even just munch on the appam on its own, it's just so good. And I love appam because its home for me. You will see many variations of how to make this and this is how I was taught but no method is wrong but you may need to find the one that works for you.
White pastaHonestly, when I first decided I was going to make this I thought it really wouldn't work. It wasn't a complete disaster because I got figure how to make it work for me. And I just love pasta in general so, it was great. You can also add alot of different elements into this recipe to take it to the next level. Like maybe add some mushrooms or broccoli. Don't want to add anything that's fine too, there is a lot of flavour and it's great just as it is as well.
