Holy Guacamole Slow Cooker Enchiladas
Even though I teach cooking courses, I don't always have time to whip up something extravagant. This is an easy meal that combines my southwest background with the craziness of motherhood. It will give you a new reason to pull out that Crock Pot! Although this recipe doesn't actually call for "guacamole", it is so good, you can't help saying it. Submitted by: "Stephanie Sullivan"

Cookbook Recipe
Alan's Crock Pot White Chili
My two older sons love my traditional spicy chili on a cool evening, but my youngest son, Alan, does not like tomatoes. When I came across several "White Chili" recipes which do not use tomatoes, I modified it to make it a crock pot recipe, because I am often not home in the afternoon to prepare a 6:00 dinner. This is one of Alan's favorite recipes now, so I finally have a chili recipe that makes everyone happy! Submitted by: "Joanne Kervin"

Cookbook Recipe
Quick 'n Easy Stromboli
Our kids love these, and it's a great way to use left over chicken, steak, pork...any protein in your fridge. Serve with a salad and you are good to go. Make a few ahead, freeze, then bake. I always keep a few cans of the pizza dough in my fridge. Easy peasy. Submitted by: "Kristina McGonnigal"

Cookbook Recipe
No Time Chicken Tortilla Soup
Another great way to use a cooked rotisserie chicken from your grocery store! Kids like the fix-ins they can add themselves. Submitted by: "Kristina McGonnigal"

Cookbook Recipe
One Pot Chicken and Yellow Rice
Submitted by: Clewis Standby
This is family standby recipe when we have just arrived home and want a simple easy hot dinner. Meal preparation takes 10 minutes with cook / bake time around 35 minutes. Easy one pot concoction with a side vegetable or salad is a delicious satisfying repast.

Walter's Chicken Casablanca/Crockpot Recipe
The crockpot is my best cooking companion as I'm sure any busy Mom will agree! While commiserating about wanting more variety in my "meal rotation" to a co-worker, she wrote this recipe off the top of her head. Her family loves it and now mine does too. I have shared this with many a co-worker looking for something different to make in the crockpot. Feel free to substitute or add vegies as you like. Careful to stay away from cauliflower and broccoli as they may make the dish bitter. To save time just substitute and sprinkle about 1 T. of Chinese Five Spice over chicken instead of measuring cumin, turmeric, cinnamon, and cayenne listed below. Submitted by: "Molly Finn Johnson"

Cookbook Recipe
The Ultimate Greek Mac and Cheese
Looking to put some pounds on my boys, I asked a friend for some "stick to the ribs" food ideas. She directed me to Women's World Magazine where I found this hearty dish in the January 21, 2013 issue. This is the perfect combo of pasta, meat and cheese! It takes some time to prepare, so when you have a weekend to cook prepare this casserole, let it cool, cut into individual servings, wrap, freeze and store for reheating as needed. Greeks call this Pastitsio - we just call it irresistibly delicious! Submitted by: "Molly Johnson"

Cookbook Recipe
Chocolate Banana Nutella Smoothie
I'm always trying to find nutritious foods as breakfast options and after school snacks. This smoothie fits the bill and is a breeze to make. Submitted by: "Catherine Gwinner"

Cookbook Recipe
American Turkey Goulash
This recipe is from one of my two favorite cookbooks, Eating for Life by Bill Phillips. I love this book because it make cooking simple. Each recipe displays photo of what a completed meal should look like and a picture of all the ingredients needed. Submitted by: "Lisa Busser"

Cookbook Recipe
Claire's Chili
I always feel guilty making this recipe because like all food preparation that I do, I look for shortcuts. I guess it’s from not really liking to cook and having raised five children who needed to be constantly run from practices to homework and back. I was desperate for these quick but healthy meals. Enjoy! Submitted by: "Claire Malachowski"

Cookbook Recipe
Southern Slaw Dogs
Sometimes a good hot dog is all the kids really want. Submitted by: "Kristina McGonnigal"

Cookbook Recipe
Energy Balls
The recipe came from my friend Marilyn Sandborn. My family enjoys this healthy protein packed snack. Submitted by: "Meagan Jones"

Buffalo Chicken Burgers
This recipe is one of my family's favorites. When Burger 21 opened, they were obsessed with their buffalo chicken burger. We came up with a healthy and quick alternative. When I make these, I make extra and freeze them in individual sandwich bags. When we're in a hurry, I pull one out and defrost. Submitted by: "Amy Daner"

Cookbook Recipe
Quick Juicy Lucy's
When I know we're going to have a late night in the car I pick this dinner because it's so fast to make. I pre-make the pattis in the morning and cook the burgers when we get home. Submitted by: "Amy Daner"

The Ultimate Caribbean Rum Punch
When most people think about the Caribbean (if you've ever lived on the islands) one of the things which comes to mind is sipping on a cold glass of rum punch, decorated with slices of fresh fruit while sitting taking in the rays on white sandy beach. Truth be told, rum punch is not as common a drink with locals as you would think. A more classic drink would be rum and coke or if you were in Cuba, a Mojito and if in Puerto Rico, it would be Pina Colada. I'm going back to my "ultimate" series and in doing so, give you what I think is the perfect rum punch recipe. Submitted by: "Theresa Wresh"

Cookbook Recipe
Daphne Oz's Coconut Pound Cake
Claire Malachowski writes: Janet baked us the most delicious cake from scratch after our first meeting – yummm! Janet, I vote you submit this to the Mothers’ Club cookbook - TASTE OF TIGERS. It could be a Rosary Group favourite! Submitted by: "Janet Turn"

Cookbook Recipe
Quick & Tasty Chicken Penne with Zucchini, Tomato & Red Pepper
Like most moms of high schoolers, I'm always scouting out healthy, easy to prepare and yummy recipes for my family. As my son loves pasta, I tend toward any food containing some type of this Italian favorite. This particular recipe evolved from one I found on the back of a box of penne pasta. It has lots of fresh veggies - check the healthy block. It uses pre-cooked chicken breasts and is fast-fixin' - check the easy to prepare block. And finally, it illicitated a "Wow, that smells good!" from my son - check the yummy block! So, from my home to yours - Bon Appetit! Submitted by: "Catherine Gwinner, P'17"

Crunchy Broccoli Salad
I first had a similar salad at the home of my best friend. It was made by a wonderful lady who was fighting cancer at the time. I loved it when I first tried it and knew it would be a staple for me. It has and I have OFTEN make this upon request - my family, our scout friends, sporting end of season parties, etc. Submitted by: "Deedee Gatz"

Cookbook Recipe
Janet's Yummy Blueberry Zucchini Bread
As one of the co-chairs for the Jesuit Mothers' Club Rosary Group for the past 3 years, I've enjoyed baking and sharing my food during our fellowship time each week. In the fall of 2015 I made this bread for our rosary group. This particular recipe is one that I received from the owner of a Plant City blueberry farm (who adapted it from the allrecipes.com website). I hope you enjoy baking and sharing this recipe with your family and friends! Submitted by: "Janet Turn"

I actually can't remember where the original recipe came from but I've been making it for my two boys since they were little. I hope your boys enjoy it too! Submitted by: "Mary Connors"

While you're checking out cookbooks, also take some time to visit other parts of the delicious BakeSpace.com community where you can swap recipes and connect with others who share your passion for food and the culinary lifestyle.
