Even though I teach cooking courses, I don't always have time to whip up something extravagant. This is an easy meal that combines my southwest background with the craziness of motherhood. My two older sons love my traditional spicy chili on a cool evening, but my youngest son, Alan, does not like tomatoes. When I came across several "White Chili" recipes which do not use tomatoes, I modified it to make it a crock pot recipe, because I am often not home in the afternoon to prepare a 6:00 dinner. Our kids love these, and it's a great way to use left over chicken, steak, pork...any protein in your fridge. Serve with a salad and you are good to go. Make a few ahead, freeze, then bake. Walter's Chicken Casablanca/Crockpot Recipe
The crockpot is my best cooking companion as I'm sure any busy Mom will agree! While commiserating about wanting more variety in my "meal rotation" to a co-worker, she wrote this recipe off the top of her head. Her family loves it and now mine does too. I have shared this with many a co-worker looking for something different to make in the crockpot. Feel free to substitute or add vegies as you like. Careful to stay away from cauliflower and broccoli as they may make the dish bitter. To save time just substitute and sprinkle about 1 T. of Chinese Five Spice over chicken instead of measuring cumin,turmeric, cinnamon, and cayenne listed below. Looking to put some pounds on my boys, I asked a friend for some "stick to the ribs" food ideas. She directed me to Women's World Magazine where I found this hearty dish in the January 21, 2013 issue. This is the perfect combo of pasta, meat and cheese! It takes some time to prepare, so when you have a weekend to cook prepare this casserole, let it cool, cut into individual servings, wrap, freeze and store for reheating as needed. When most people think about the Caribbean (if you've ever lived on the islands) one of the things which comes to mind is sipping on a cold glass of rum punch, decorated with slices of fresh fruit while sitting taking in the rays on white sandy beach. Truth be told, rum punch is not as common a drink with locals as you would think. A more classic drink would be rum and coke or if you were in Cuba, a Mojito and if in Puerto Rico, it would be Pina Colada. Like most moms of high schoolers, I'm always scouting out healthy, easy to prepare and yummy recipes for my family. As my son loves pasta, I tend toward any food containing some type of this Italian favorite. This particular recipe evolved from one I found on the back of a box of penne pasta. It has lots of fresh veggies - check the healthy block. It uses pre-cooked chicken breasts and is fast-fixin' - check the easy to prepare block.
