Not my favorite. I think the recipe has a lot going on that doesn't necessarily mesh. I want to finesse this next time i make it. UPDATE - I mashed up what was left of the cake and poured in a little bit of almond milk to make it moist, and turned them into cake pops and they are pretty tasty....Form the mashed up former cake into little balls, and freeze for an hour. Take out and let soften, then heat Nutella in microwave for about 30 seconds. Dip popsicle sticks into Nutella then poke into your ball and then coat the entire ball in the Nutella. Let set for a few mins and enjoy. Can keep in the fridge for several days. Much better than its original cake form.Veggie Chorizo Taco Salad

Ok fair warning that this recipe is SPICY. I learned it in a cooking class with the head chef of my favorite Thai place in LA (Jitlada). But the beauty that I learned in that class, is that stir fry isn't a science....and it's pretty damn easy. So take this recipe as a starting point and mold it to your palette. Scale back on the thai chili, add/subtract bell peppers and onions, swap serrano pepper for a jalapeño. Or make it veggie by using tofu instead of chicken. The world is your stir fry oyster. I was a bit skeptical when I saw a salad with a base of entirely cilantro. But it is sooo fresh and goes really well with a fatty fish. So fresh! If you don't want only cilantro you can do half and half with parsley or throw some dill or mint in the mix, but the key is to use 3 cups of herbs.Garlic Rosemary Naan

So I was cooking for company one day and for the main course I was making a curry. I wanted to make an appetizer that followed the Indian theme and I didn't feel like making samosas. I came across this recipe on NYT Cooking and it sounded perfect. While it's still pretty similar to tradition guac, and I wouldn't quite call this an Indian dish, adding the toasted cumin and subbing the tortilla chips for pita chips/naan made it make sense for our meal. Highly recommend it if you are bored of your usual guac!Chicken Breast Tenders with Turmeric and Lime

I whipped up this aioli by grabbing everything that was in our fridge at an Airbnb to make a sauce to go with eggs that Jackson made. I totally winged it but we were both shocked at how good it is and I wrote down everything I used. I need to figure out the right proportions and I'll update this once I do, but part of the fun is playing with it so it's slightly different every time. We used this sauce in place of hollandaise on Eggs Benedict and low key never need hollandaise again...Chicken Panang Curry
One of my favorite curries to order at Thai restaurants, but I find that it's very inconsistent from place to place, so I took it into my own hands. In researching recipes, I found out why it's so inconsistent from restaurant to restaurant...there doesn't seem to be one right way to make this. People vary the amount of coconut milk and curry paste by A LOT, and there's ingredients like peanut butter, ginger, and corn starch that some people use and some people don't. So this is definitely a WIP recipe, but we were pretty happy with it. The one thing you need in order to make a Panang truly taste like a Panang, is the Kaffir Lime Leaves. You'll probably need to go to an Asian market to find it, but it's definitely worth it. Might want to try this with chicken thigh instead of breast next time.Sheet-Pan Baked Feta
A recipe I was dying to make for months from NYT Cooking, but couldn't because Jackson isn't the biggest fan of cheese, and obviously feta is the star here. Then it dawned on me that tofu could be a good replacement for the feta so I basically split the sheet pan into his and hers and nestled the tofu and feta on our respective sides. I recently discovered Shirataki noodles and I still think they are too good to be true. They are like 10 calories and actually taste like noodles, unlike spaghetti squash or zoodles. The origin of this pizza was Jackson's birthday when I offered him a three course meal of his choice. He really wanted my coconut miso salmon curry as the entree, but he also really wanted my vodka sauce pizza as the appetizer. Those don't really pair well, so I was tasked with coming up with a pizza that would go well with the curry. So I did some digging online, and found an article on SpicySouthernKitchen.com for a Thai Chicken Pizza (a dupe on the CPK version). This randomly came to me when I had a whole carton of strawberries that looked like they were on their last leg, and a ton of leftover frosting from when I made cupcakes the week before. I basically referenced my banana bread and zucchini bread recipes and created a hybrid and added strawberries to it. Then I melted some of the leftover frosting I had and drizzled it on the top to be a sort of glaze. Had no idea how it was going to turn out but I absolutely loved it! A yummy St Patrick's Day treat We didnt love the "pot o gold" in the center but it may have been because of the sprinkles we ordered online. They were way too hard and crunchy.
