PUMPKIN SOUPReprinted from Celi-Yak News - Spring 2009 Enjoyed at our November dinner at Winnipeg Technical College
GLUTEN FREE BAKING MIXReprinted from Celi-Yak News - Summer 2009 Use this recipe for making baked goods (muffins, cakes, etc). Substitute this mix to replace wheat flour in "regular recipes".
GLUTEN FREE PIZZAReprinted from Celi-Yak News - Summer 2009 For those of us who love thin crust pizza; use brown rice tortillas made by Food for Life (available at Lorenzo’s in the frozen section).
CHEESE KRISPSReprinted from Celi-Yak News - Kid Talk - Winter 2009 An easy recipe the kids could make for Christmas.
CHEESE KRISPSReprinted from Celi-Yak News - Winter 2009 An easy recipe the kids could make for Christmas
CHOCOLATE CARAMEL BITESReprinted from Celi-Yak News - Winter 2009 This chewy caramel requires a watchful eye and constant stirring.
BLUEBERRY CORN SALADReprinted from Celi-Yak News - Summer 2010 From 2009 Christmas party with thanks to Mary Ross
TABOULI SALADReprinted from Celi-Yak News - Summer 2010 (a Middle Eastern grain and vegetable salad)
GLUTEN AND DAIRY FREE APPLE ZUCCHINI SPICE BREADReprinted from Celi-Yak News - Fall 2010 Gluten and dairy free apple zucchini spice bread is an easy, moist GF quick bread recipe. Freshly shredded apples and zucchini lend flavor to this fragrant, fall inspired gluten and dairy free quick bread recipe.Another benefit of adding fresh fruit and vegetables to quick bread recipes is that you can cut back on the amount of gluten-free flour called for, an easy way to save money and add nutrition to your gluten-free diet.
SLICE & BAKE FRUIT CAKE COOKIEReprinted from Celi-Yak News - Winter 2010 "In Memory of Sharon Aikens - a good friend and avid baker" The Webster Family
GLUTEN FREE FLATBREADReprinted from Celi-Yak News - Winter 2010 This gluten free flat bread recipe came from the Food Doctor (Ian Marber) Everyday Diet book.Ian happens to be a celiac, and so many of his recipes are gluten free, as well as being very tasty, and nice and low on the GL scale.
NO-FUSS GLUTEN-FREE POULTRY STUFFINGReprinted from Celi-Yak News - Spring 2011 Use your favorite gluten-free sandwich- style bread to make the bread cubes in this tasty turkey stuffing. It can be made egg free with good results. For dairy-free stuffing, use dairy-free bread.
ESPRESSO BROWNIESReprinted from Celi-Yak News Summer 2011 Tester's notes: While chickpeas usually make me think of garlic and lemon and a big bowl of hummus, it turns out that they also get along with chocolate and coffee. These brownies have a dense but tender texture and a very grown-up taste. Krista says the coffee powder is optional, but it really adds a deep, dark flavour, which was even better the next day.
MONSTER COOKIESReprinted from Celi-Yak News Summer 2011 Tester's notes: Bonnie got this recipe from her friend Heather, who got it from a manufacturer of gluten-free oats. Gluten free products can now be found at many Winnipeg health food stores, organic food stores, specialty shops and even some grocery chains. This is a soft, chewy, delicious cookie that should appeal to everyone, gluten issues or not. Bonnie prefers adding raisins and coconut, but you can use any combo. Make sure to watch while baking: peanut butter cookies can scorch quickly.
SPAGHETTI SQUASH & MEATBALLSReprinted from Celi-Yak News Fall 2011 Very Healthy, Nutritious and Tasty!
CHEX MIX PARTY BOWLReprinted from Celi-Yak News Fall 2011 Gluten Free Chex Mix recipe from http://glutenismybitch.wordpress.com/ Chex Mix Bowl recipe from http://www.foodnetwork.com/
GIBLET GRAVYReprinted from Celi-Yak News Winter 2011 We've included the liver in our giblet gravy, which gives it a richer flavor. If you simply cannot abide with even a hint of the taste of liver, you can leave it out. Giblet gravy is usually served "chunky", if you want, you can purée it for a smoother gravy. One traditional option is the addition of chopped hard boiled eggs to the gravy. If you want to try that, chop up 3 hard boiled eggs finely, and add them to the gravy in step 5.
HONEY GLAZED HAMReprinted from Celi-Yak News Winter 2011 For your holiday dinner, this recipe for a honey and butter glazed ham is spectacular.
GLUTEN FREE TRADITIONAL CROCKPOT DRESSINGReprinted from Celi-Yak News Winter 2011 Prepare this traditional gluten-free stuffing recipe in a slow cooker (crockpot) and you free up valuable shelf space in your oven for roasting turkey and baking pies! This recipe is adapted to gluten-free diets from a recipe by Linda Larsen
MANGO AVOCADO SALADReprinted from Celi-Yak News Summer 2012 This is a colourful salad, looks good on the buffet table.
TRAIL COOKIESReprinted from Celi-Yak News Fall 2012 A delicious moist cookie, great for school lunches!
DINNER ROLLS FOR CHRISTMAS DINNERReprinted from Celi-Yak News Winter 2012 These rolls can be made ahead. Bake them and let them cool in the pans; wrap them in plastic wrap and refrigerate for up to 2 days. Warm for a few minutes in a 350° oven and serve. GF GRAHAM CRACKERSReprinted from Celi-Yak News Fall 2013 These easy-to-make crackers are crisp and flavorful. They’re delicious on their own and ideal for any place you want to enjoy graham crackers, such as in pie crusts and smores. Double or triple the recipe. In fact, keep a mixture of the dry ingredients on hand so you can whip these up in short order. They’re egg free and can be made dairy free, as instructed.
GLUTEN - FREE, DAIRY- FREE BLACK BEAN BROWNIESReprinted from Celi-Yak News Fall 2013 This gluten-free, dairy-free recipe might just be one of the highest-fiber, highest protein brownies around. So rich-tasting and full of chocolate flavor, even kids won't have any idea what the secret ingredient is.
