My dad makes this for holiday meals without fail. This always reminds me of home. While technically a pudding, it is more reminiscent of a baked pasta dish. It tastes a lot like rice pudding and can be eaten warm or cold. It can also be eaten as a side dish, dessert or breakfast. Or even straight out of the pan. Chicken curry is a staple food in Durban, South Africa. The smell of Indian spices lingers in the air in any shopping center or street market you find yourself in. The chicken curry can be enjoyed in many ways, on top of rice, in a hollowed out bread loaf using the hollowed out bread to suck up the juices, or wrapped in a Durban roti (similar to a US tortilla). This recipe became a fave for the vegetarians in my family. Growing up in a family of hunters and carnivores, the vegetarian family members were often disregarded at family functions. Not so much intentionally, but more because the seniors in the family who did most of the cooking were set in their ways. As I got older and started to host family events at my home, I made it my business to ensure that ALL of my family members had good food that they would not only enjoy at dinner, but also to take home!
