This recipe was given to me by a mom in Shana's preschool class. Each year for the winter concert at Soquel High, Shana would beg me to bring them because the band kids loved them so much. Submitted by: "Susie Jenkins"Healthy Pumpkin Pie
The tofu and berries give this pumpkin pie a very satisfying taste and texture, turning this simple dessert into a veggie/bean/fruit casserole. It can be modified with a sugar substitute such as stevia, and made gluten-free by using a gluten-free crust. We prefer this Pumpkin Pie recipe over store bought Pumpkin Pie, plus it makes a simple/quick meal for breakfast, lunch, or dinner too. The huckleberries add a nice tangy flavor. Eating half a pie per meal has happened when we had teenagers in the house...thus why when asked above about serving size I wrote 2-8 per pie. Submitted by: "Barb Hughes"Norwegian Lefse

If you're not logged in to BakeSpace, you'll be asked to login (or join) so the cookbook can be added to your cookbook library. Once in your library, you can access the cookbook anytime, anywhere via BakeSpace.com, as well as our Cookbook Café iPad app.
