Ray's Boxing Day Stuffed Peppers
This recipe is very adaptable e.g. on Boxing Day it can be made with chopped up ham or even cooked sausages as the meat ( but never turkey ), and the filling can contain left over peas or diced carrots ( but avoid Brussels sprouts nor parsnips). It is best to oven bake in a transparent Pyrex dish to have a good view of the cooking but this is not essential. You can add some milk if they look like drying out.Lindsay’s famous Tuna in puff pastry
I remember the many dinners we shared with Lindsay and Ray - all pulling faces and playing games! Was such a lot of fun! Maybe the next time we meet, we can put this on the menu!Broccoli Soup with Goat Cheese Surprise
I was really stumped when asked for a recipe for this beautiful cookbook! But, overnight my broccoli soup sprung into my dreams and I scribbled it in my notepad by my bed! It is ridiculously easy to make and something that I have adapted from different sources (not that I remember what they were). It is nothing special, but my mum loved it and I had the pleasure of watching her really, really enjoy it when I prepared it for her on her last visit to London.Isabel's Autumn Risotto
I know you love a good risotto, and you are brilliant at them too! But this combination of squash and sage sounds delicious, and nutritious!Emily's Maltese Biscuit Cake
This recipe sounds like a maltese version of Tiramisu - which I love! Maybe one day Ems, you can make me this!Fran's Roast Veggie Lasagne
This sounds like the perfect Winter recipe with beautiful roasted veggies, which gives them a particularly nice and smoky flavour.Leto's Boozy Peruvian Ceviche
I hope Leto has made this for you already, as it sounds amazing and exotic! I'm dying to try it myself!Neil's Sweet Potato Gnocchi!
I always hear stories of you and Neil in the kitchen cooking up a storm! And now, we can all try some of these recipes out!Emma L's Tuna Pasta Pesto Bake
Emma L chose this recipe for your cookbook because it was the first meal you cooked for her when you were poor wee students and she had just moved down to Edinburgh!! Sweet!!Claudia's Bigilla
I seem to remember that we made a pretty good version of Bigilla this summer - Darren went so far as to say it was the best he had ever tasted! Score!! So I'm really pleased that Claudia sent this in for you, as we can try it again!STUFFAT TAL-QARNIT (Octopus Stew)
Well Emma, this one is for when you are feeling adventurous, and wanting to reconnect with the Maltese side! When I think of octupus I always think of Nannu arriving from Malta, with several of them half stewed in his suitcase!Maria and Leila's Arabic Soup
Maria and Leila wanted to share a taste of the exotic with this tasty, spicy, warming soup....Looks really yum I have to say!Kristin's make ahead French Toast!
"We host a "we survived the holidays" brunch for friends and neighbours every year on the Sunday nearest Jan. 6th- Lindsay's Birthday. The first one was for her quccija, and now we do it every year. French Toast is always the favorite."Jeanine's Banana Bread
I'm very pleased we have a banana bread recipe in here. It is such an Aussie breakfast - toasted, with a little butter to have alongside a 'soy flat white'. You have to come over and try a piece! Or make this one! Might be a little easier!Ruthie's Salmon Stir Fry
Ruth has cooked this dish for myself and mum, and we thought it was absolutely delicious and of course very healthy!Ian's Healthy Pork Belly
This is a guilt-free version of pork belly, so that all your time sweating in the gym is all worth while!Ftira
Debbie sent me this recipe - which got me really excited! We wanted to make this when we were in Malta last time - and now we can give it a go! Lets hope they go a bit better than the pastizzi!! Thanks Deb!Pilau Rice
This is the perfect accompaniment to Debbie & Gabby's chicken korma recipe. Match made in heaven!PUDINA TAL-ĦOBŻ (Bread Pudding)
"This is my version of the Bread Pudding as eaten by the ‘Mizzi Clan’. It is definately a favourite with Therese and during the winter months I end up baking it at least once a week!"Auntie Doris' Baked Macaroni
I love this recipe because it so reminds me of Malta! This is a slightly abridged version, to make it a little lighter, Auntie Doris style!Dad's Mushroom Capaccino
This is the recipe I think dad ever learnt to cook - properly!! And he's made it a few times now, and we are always very impressed! Keep it up dad!!Heather Smith's Cullen Skink
When we approached Heather for a recipe, she sent us a wonderful collection, which she had prepared for her grand-daughter Clare, who is now going away to uni! Gosh how time flies, I remember when she was born and playing with her in Paris!! We are all getting older Em, not just you!!!MACARONI CHEEEEEESE!!
I know this is your favourite - so had to include it! The recipe was in Heather Smith's recipe book for Clare! How did she know!Sapori
This is both mine and dad's favourite cake.....and with you being the expert and all I thought this one should definitely get a spot in here!MAMA'S TABBOULEH
A traditional Middle Eastern salad that is zesty and refreshing. We know you love this Ems, so much so that you have been seen licking the bowl clean!!Sue's Chocolate and Salted Caramel Cake
This is a long winded recipe, but is delicious and well worth the effort for a special occasion...and after all that work you will well and truely have earned a nice large slice with a cup of tea and it is Niamh's favourite cake!Mince Delight!
Zero and Jamie both like this recipe and insisted that they made a contribution! Jamie seems to like it best at Granny’s house served in Zero’s bowl! And Zero will wolf it down fastest from the wee dog’s bowl..wherever!Jude's Smoothie
This is a really great way to start the day! Really quick to whizz up, really easy and really healthy! All my favourite things!!Thank you for your interest in judigalea's cookbook and for helping support the BakeSpace community of independent cookbook authors!
