You can double the meat/cabbage recipe if feeding more than four people, no one can eat just one! There usually is leftover dough so you can use that to make extras or you can put butter, cinnamon, and sugar on the leftover dough and roll up to make cinnamon buns for desert. (Any bread dough would work for making bierocks, use your favorite recipe or even use frozen.) Some people put grated cheese inside. Really, the sky is the limit. Bierocks also make a great lunch the next day and travel well in a lunch pail. Anyway you make them, these bierocks will be devoured in no time flat!Elsie's Potatoes

This recipe is one of those "got to makes" when baking a ham! It is a tradition in this house. I am not too fussy about how fancy the potatoes go into the pan, but that's on you. You can carefully arrange them, like I did in the past or you can simply toss them into the pan, but remember to keep the layers. I remember Great Grandma & Grandpa Gadberry and Grandma & Grandpa Phillips sitting in our dining room among boxes and boxes of fruits & vegetables with their paring knives and chopping utensils going to town on all the produce in preparation for canning. This could be a week long process and among the batches would always be Chow Chow or Green Tomato Relish. At the end of the process, jars and jars of wonderful goodies would line the kitchen counter. The goodness of home canned foods just can't be beat, and the memories that go with them are just plain love! I couldn't ask my dearly departed grandparents for their recipe, but my cousin gave me his that he adapted from his mother Dorthy Gadberry's recipe, and she got hers from her mother Clara Floyd. This might even be where grandma got her recipe because it is very similar. I’m very happy to have Aunt Dorthy’s recipe because my grandma cooked without ever using a recipe or writing down her own. Besides all that, Chow Chow is very tasty and is a Southern favorite and it's great with sausages, pork, and ham, or serve it with hot dogs or burgers. Wacky Cake is surprisingly one of the best cakes I've ever made! It has a wonderful texture and flavor. This is a very old recipe that's been around since my grandmother's time, but I only found it when my kids were little and it is just as easy as using a cake mix. It is a cake that became popular during the depression and war era when eggs and milk were scarce. You can make it in the same pan you mix it in. This was done by mixing all the dry ingredients and placing them directly into the pan and then make three holes to add oil or melted butter in one, vinegar in the second hole, and water in the third hole then mix it all together. You don't even need eggs! All the ingredients are basic staples and so Wacky Cake can be made anytime, and it's just so easy to do! Usually when I roast a chicken I end up with about half of the chicken leftover and that is what I used in this recipe. You could use more or less or even buy a rotisserie chicken and use that. This soup was entered in my children's elementary school cookbook, twice, with one containing zucchini. I love zucchini, but always left it out because of my kids. I used the wrong amount of sugar because I, well it's a long story, but let's just say that I got distracted and went for lunch before finishing the recipe because I didn't have sour cream so... well, first of all I was going to change to another recipe before going shopping, but then realized I was also out of eggs so I asked my sister Diana to bring some over for me and then she brought the sour cream too and then we decided to go for lunch and I'd finish the muffins later. Breath in. The first recipe called for more sugar than the second recipe and when I went back after lunch to finish making the muffins I thought that I had already put the smaller portion of sugar into the bowl, but it turns out that I didn't LOL. The moral for me is, remember to check to make sure that all the ingredients are on hand before starting the recipe. Anyways, even with a severely reduced amount sugar they still tasted good! Oh, and also the second recipe called for a streusel topping that I really liked the sound of so I borrowed that. If you want to do it that way, use 1/4 cup flour, 1/4 cup packed brown sugar, 1/4 tsp cinnamon, (but I used 1/2 tsp) and cut 2 Tbsp butter in until crumbly and sprinkle over muffins before baking. This hearty favorite is simple and versatile. Diana likes to throw every vegetable in the fridge in there, she says the more veggies the better! The picture shows the trifle that I made last week. The recipe is for Diana's trifle, but I ran into snags finding all the ingredients and it turned out beautifully in spite of it all. I had to substitute strawberry jello because my store didn't have peach and I had to use lady fingers because jelly rolls weren't available either. Make sure to allow several hours to prepare because you will need to chill each layer individually. Starting in the morning is a really good idea. P.S. DO NOT use fresh pineapple in jello, it will totally dissolve the jello. Trust me, I had to start over! That is why I don't have the lime jello layer because it melted and the only other package of jello that I had on hand weirdly enough was pineapple. Crunchy cornbread totally reminds me of Grandma Phillips! My mother says that her daddy Vernon made the cornbread though. He put celery and onions in it before baking to use in their cornbread stuffing to serve with roasted turkey. Pecan Tassies are made in a mini muffin pan. This recipe makes 24 tassies. I have a cool little tool that I got from Pampered Chef that looks like a miniature wooden dumb bell with two different balls on each end that I use to shape the dough into cups. If you don't have one of those you can just use your fingers and press the dough into the mini tart pan. These Pecan Tassies are so worth the investment of the pan and the dough shaper!
