Rainbows Of Vegan Love
This book is dedicated to the friends and family who helped eat their way through all of my vegan dishes every weekend.
Those that suffered the fate of being on video audio, and photograph after photograph as well as getting their words published in my blog. You all gave me the strength to keep pushing through to recipe 100.

Scotch 'eggs'
Sausage wrapped around an egg? No WAY. But we veganized it.. step by step. And you can too! Tastes Amazing!'Eggs' Florentine
Nothing is impossible when you set your mind to it. You CAN have your eggs and be compassionate too! Dip your bread into that vegan yolk. You won’t be sorry!"Eggs" Benedict
I have made this in a few different ways. This recipe was the very first one I used. Again, have your eggs and be compassionate too. One of my favorite breakfasts and I can re-live it whenever I want to!"McVegan" Sausage "Egg" and Cheez Burrito
Inspired by a McDonalds billboard, of all things. This breakfast burrito really delivers. Big on taste, small on waste. Drop the Mc, and go with this healthier vegan version!Scrambled 'Eggs' and “Sausage Gravy” with Home Made English Muffins
This full on breakfast will keep you full no matter what you have to do. It’s everything breakfast is made of in one big vegan mash up. Think you can’t have a big breakfast being vegan? Think again!Mini Quiche Cupcakes
Yet again, we crush the old adage that says you can’t enjoy eggs when you’re vegan. As long as you have the right ingredients, you’ll never know the difference. These little quiche are always a hit and went fast at the 2013 Farm Sanctuary Walk For Animals!Luckier Charms Cereal
I challenged myself to make my very favorite cereal, vegan. After all – this is about what I used to love before veganism. Did it measure up? Try it for yourself!Banana Bread Pancakes
Who doesn’t love pancakes? Especially buttermilk pancakes. Let’s take the butter and the milk and switch them out with vegan versions. You’ll have pancakes as moist and yummy as the original!Hazelnut Soup
Cream based, the original soup is filled with butter and dairy cream. Here we make it better, and tastier! Try it out for yourself, and you might find that mother actually DIDN’T know best when it came to ‘get your dairy!”Thai Coconut Soup with
I’ve never been much of a shrimp person, and this was enough to give me the willies! Don’t tell me that you can’t veganize shrimp. Try this one and you’ll be eating your WORDS!Italian Wedding Soup
Meatballs, meatballs – this is full of rich, hearty “meat” balls, and a little bit of vegan parmesan. All of the flavor; none of the animal.Cheezy Bacon Potato and Leek Soup
Potato soup without cheese and bacon makes for an ‘unloaded’ boring soup right? Well here we’ve added vegan cheese and vegan bacon, same great taste – but with compassion!"Egg" Drop Soup
Eggs, chicken broth, this is a vegan’s worst nightmare, especially if you loved the stuff pre-vegan. Well fret no more! We’re bringing it back – vegan style!Cheezy Squash Soup With Turk'y Meatballs
Hearty vegan ‘turkey’ meatballs and creamy butternut squash make this soup a must for a cold day!Pan Fried Cornbread
Ah cornbread. We know it as that stuff that’s usually pan fried in animal fat. Yuck! This much tastier version fits the bill for vegans and omnivores alike.Bread Bowls - For anything to fill!
Who doesn’t enjoy putting soup, stew or chili in a bread bowl, especially during the chilly days of fall and winter? Here we make them w/o butter, eggs or milk to put your favorite vegan soup, stew, chili, or dip in!Bluebirds Of Love - Birdseed Rolls
For the birds?! Yes, and people alike. Filled with healthy seeds and sweet agave, this bread really satisfies with a hearty meal!Soft Pretzel Bread
Pretzels. NOT laden with butter! I use these for sandwiches, but you can eat them plain with a little kosher salt too. Pass the mustard and melty vegan cheese, please!Mac and Cheeze
Macaroni and cheese (because of the cheese, clearly) is one of the most un-vegan items out there. Modern science of plant foods has made ‘cheese’ for us a habit again. This is the most decadent mac and cheese I know!Cheeze Souffle'
A soufflé is normally made of eggs, and a cheese soufflé pulls almost a triple whammy with cheese, milk and eggs. We can change that and it’s still yummy!French Fries and/or Cheezy Fries
Potatoes in and of their selves are vegan, but they can get extraordinarily unhealthy when you fry them. In this instance, we’re baking them to a golden, healthier version, and possibly making them less healthy by dolluping them with vegan cheese. Hey, sometimes you gotta do it!Cheezy Scalloped Potatoes
Traditionally scalloped potatoes are cooked in milk and cheese. In this version, we make them creamy without either of those un-vegan items!German Goetta
Goetta is a German breakfast sausage that blends the textures and flavors of pork, beef, whole grain steel-cut oats, fresh onions, and herbs. Umm, yuck. But if you have to have your goetta, you CAN do it vegan! Give it a try.Mashed Potatoes and GRAVY!
Mashed potatoes are usually made with milk and butter and topped with meat gravy. In this instance, we can substitute something for everything! YUM!Victoria's Baked Vegan Stuffing
Stuffing quite often has chicken broth and sometimes meat in it. This one is a ‘turkey’ version and its honorary name from Victoria the Turkey who lives happily on a sanctuary.Peyton's Stuffed Carnival Squash
Stuffed squash is usually filled with chicken broth. Here we utilize veggie broth, and it gets its name from Peyton, who lives his happy life on a sanctuary.Green Bean Casserole
Traditionally, filled with milk and chicken broth, we veganize this one into a yummier, healthier version. Now I've made this once or twice, but I have to give kudos out to Analeah Clark who rocks this particular recipe of mine. :)Potato Salad
Potato salad is usually filled with eggy mayo. In this version we utilize vegan mayo for the same great taste, only veganized!"Egg" Tarts
Normally, Egg tarts are sweet eggy custardy goodness made of eggs and in a tart type shell laced with butter, we blast that recipe out of the water with our own vegan version. Try it for yourself.California Rolls
Naturally, California rolls are packed with crab and cream cheese for this Asian delight, but check it out. No shellfish or dairy needed here for the same taste!Coconut Creamed Spinach
Normally, creamed spinach is a conundrum mixed with healthy spinach and not so healthy cream. Veganize it, not only because it’s healthier, but it ALSO tastes fresher!"Crab" Cakes
Crab cakes of course are filled with crab, tartar sauce. What’s a vegan to do? Don’t despair, we have the answer right here. It’s safe for crabs to come out to land again! *For Mary Beth*Corn Dogs
A hot dog is nowhere near what you want to think it is (gross) and battered eggs to top it? That’s a corn dog. It’s confusing why kids love this so much. Never fear, a better ‘corn dog’ is here! Try this one on the kids for size!Eggnog Ice Cream
Whoa, eggs and cream? Could you get any less vegan? If you love eggnog ice cream but can’t have it anymore because of the eggs and cream, then here’s your recipe!Set of Veganixie's Favorite Christmas Cookies
My own mother doesn’t know how to make cookies without eggs or butter. But you do now.Christmas Breakfast Casserole
There is NOTHING about this dish that would be vegan. Eggs, Bacon, Sausage, Cheese, Cream! No way! Now, veganize it and tell me it’s not just as yummy! This is a VERY rich treat and utilizes the "Vegg” vegan egg yolk. If you do not HAVE the Vegg, you can substitute nutritional yeast with a little Kala Namak (Indian Black Salt found at international markets and online) to get the egg yolk flavor.Thanksgiving Pumpkin Lasagna
The flavors of Thanksgiving rolled into lasagna. That means ‘turkey’ and butter, too, all vegan, all the time!Sweet Agave Easter "Ham"
Ham is a pig and eating pigs is not vegan. This one requires a little work, but is well worth it in the end!Cadbury Style Cream Eggs
The original Cadbury Cream Egg is normally made with milk chocolate and unvegan cream. Not this version! Enjoy Easter cream eggs again!Chick'n Cordon Bleu
Chicken cordon bleu is not only chicken AND ham, but it’s covered in, and seeping with cheese and cream galore. I like to use the word ‘seeping’ it’s very un-pleasant. However this vegan version is BEYOND pleasant! Try it at your next potluck!Pulled BBQ Chick'n
Don’t pull chickens! Imagine if someone pulled you! I remember when my sister used to pull my hair. It hurt. Pulling chickens is not a necessity. Let’s stop the insanity with this BBQ vegan chicken! Pull pea protein instead!Chick'n and Dumplins
This one has gotten rave reviews for me. I mean – people BEG me to make it. It’s veganized straight out of the Cracker Barrel recipe too. It’s amazing and every now and then when I make it for myself, I tend to binge! I bet you won’t miss the original!Chick'n Curry with Pineapple – Thai Panang
This veganized Thai dish gives a run for its money to the original Thai version. So good! Especially with saffron rice!Un Poulet Au Porto
Julia Child’s original ”Poulet Au Porto” recipe – veganized. This took a lot of blood, sweat and tears, but worth every bite. (Truth – I cut myself while making it, It was super hot in the kitchen I was in, and after drinking a shot of port – I think I cried! Don't even ask about the Cognac.)Dragon Wing Pizza
Before one of the coolest vegans I know went vegan, we veganized this version of ‘magical dragon wing’ pizza – we even had a dragon conjure up vegan dragon wings and breathe fire into our hot sauce. How’s that for a vegan dinner? Enjoy watching our dragon make some vegan magic in the video! *For Bff Jr - Elena*Chick'n Pot Pie
Who doesn’t love a good chicken pot pie? This was a staple for me before veganism. But I don’t have to worry about a thing now, because – look ma! VEGAN chicken pot pie!Cap'n Crunch VEGAN Chick'n
Straight from the Planet Hollywood table, this vegan version of Captain Crunch chicken is made with the real deal – because although not particularly healthy, Cap’n Crunch IS accidentally vegan! And.. if you know who this is for, you know there's a backstory here. Enjoy our funny little scenario in video of what happened when we originally enjoyed Cap'n Crunch chicken at Planet Hollywood - WITH PATRICK SWAYZE! *For my BFF - Christy*Drunken Chick'n - Pad Kee Mao
No chickens were intoxicated to bring you this Asian beauty! We didn’t even make the noodles drink anything (we might have gotten tipsy though).Turk'y Reuben
Most Reuben’s are made from corned ‘beef’ but we took this one a step further and made a definite ‘healthier’ version utilizing vegan turkey slices – strait from tofurky! *For Amy*Turk'y Tetrazzini
Turkey Tetrazzini is apparently a staple outside of any other kind of tetrazzini. But guess what? This one (creamy and all) is vegan and simply amazing. The Monte Cristo
The Monte Cristo is filled with meat and more meat – namely turkey, along with an egg wash - no vegan there. But this one rivals even the best Monte Cristo!Croque Monsieur with Béchamel
This ridiculously rich, French sandwich normally utilizes Turkey and Ham and a crapload of cheeses. Does this look vegan to you? Well good news, IT IS! And in all its richness – you won’t taste a better vegan sandwich! Viva La France!"Beef" Ragout
Beef Ragout, cheese soufflé, pie and.. Oh yeah! Beef Ragout doesn’t have to come from a cow you know – or a beast for that matter! ;)Shepards Pie
The history of shepards pie would be a bleak one if you’re an animal lover. But if you loved this before vegan – I can guarantee you’ll love it even more now! Like maybe to the moon the cow jumped over, and back!Swedish Meatballs
Taken straight from the IKEA recipe, these veganized Swedish Meatballs are better than their uncompassionate counterparts. Now you don’t have to get flustered when you go visit your local IKEA store because you can make it at home – more compassionately! Danke’Meatloaf
The feedback I got on people wanting to try this was uncanny. And I even spilled my recipe to a few of you out there. It was too amazing not to share! * For Lorien*Lasagna Roll Ups
Full of vegan meats and cheeses, this roll up really delivers on the flavor you remember your Italian grandmother making. And if you didn’t have an Italian grandmother, then the one in the Italian restaurant you used to frequent!Bulgogi
Wow, what a stunner! This was made more than twice, actually – and each time it never disappointed! See how it compares to the version you’re used to.Cincinnati Style Chili
Cincinnati Style Chili is almost world famous. The flavors take some getting used to, but ask the good folks of Cincinnati to tell the difference. My daddy can’t. We made cream cheese dip, chili cheese dogs and just plain old chili spaghetti with this! Pictured is a chili cheese dog featuring a light life vegan dog and a very Cincinnati Style Chili Spaghetti! * For Dad *Pot Roast
Pot roast is wintertime favorite and also filled with beef. The plates may be deceiving here, but there’s no deceiving the vegan! This was adapted from a recipe from Disney’s 50’s Prime Time Café! Enjoy watching my little helper Lotus put together plates for me in the video!"Beef" Stew
No one will miss the animal products here. This rich and 'beefy' stew really satisfies with chunks of vegan ‘beef’ and veggies galore. It was a hit at the family dinner especially in those bread bowls!Corned Sausage with hash and 'eggs'.
Sausage, beef, whatever you use this is a wild mash up of flavors.. add your spheralized Vegg and you’ll never know the difference between the original one and the vegan one!Bangers And Mash
Everything you need to make a vegan Brit proud. I think I might have even busted out into a Spice Girls song along with this recipe!Italian Sausage Alfredo
We used homemade spinach noodles in this wonder. “Sausage” and “Alfredo” go great together – Especially vegan!Green Eggs and Ham
This is another where if you use spheralized vegg it will make for a much prettier dish, but I didn’t use Vegg – so that’s my fault. Listen to me, Sam I am – I like vegan green eggs and ham!Schnitzel With Noodles
Let’s sing it now – Doorbells and sleigh bells and…. Traditionally used with pork, we used a vegan chicken substitute, but you can sub for pork too with any one of the amazing items on the market, or make your own via seitan and liquid smoke! * For Augustus and Harriet Kroell *'Tuna' Noodle Casserole
Creamy and delicious, this vegan tuna noodle casserole has all the punch of the un-vegan one, but with a more compassionate – fish-less, twist! Talk about Dolphin free and you get to make your own cream of mushroom soup too!'Fish' Tacos
I always thought the concept of ‘fish’ tacos was a little un-appealing. These were good, and I bet they’re amazing to a fish taco lover. But I’m still lost on the concept. Regardless… have at it, the compassionate way!Orbie's Seafood Casserole
My goal was to put everything a kitty cat liked in one big casserole. I celebrated my Orbie’s life with this dish, he even tried a snack of it – it was good enough for him, even vegan! Rest in Peace, dear buddy. My big lion. * For Orbie Alexander, in heaven *'Crab' Alfredo
I made the noodles for this one. Crab Alfredo was one of my favorite “Red Lobster” dishes so I modified it from the very same Red Lobster recipe. I think mine is better – of course.'Tuna' Salad Sandwiches
One of the easiest and tastiest ‘Tuna’ salad sandwiches you’ll ever enjoy! Perfect for picnics and parties. Try to fool your friends at your next potluck! *For Chuck-E Charles*Fried 'Goose' (Tempoose)
You don’t need to fry the Christmas Goose! Here I’ve paired this delicious dish with veggies and a cupcake – this was a wonderful Christmas dinner, or can be dinner any time!Pasta With Vodka Cream Sauce
I love love LOVE Vodka cream sauce! This veganized version is no exception. Pair it with a big hunk of garlic bread baked!Black Bean Veggie Burgers
Paired with fries, these ‘burgers’ are satisfying and have a little bit of a Mexican punch to them! Pile on the veggies, let’s grill out!Fried Green Tomato Sandwich
I modified this recipe from The Hungry Bear café in Disneyland’s recipe. I have to say, it’s just as magical as the Disney version, but there’s no egg or milk in it! Yay vegan!GREEN Pasta and Pesto
Regular pesto has cheese in it – this version has vegan cheese and is just as amazing as the un-vegan version! Wow your guests and serve it with green spinach pasta!Equine Burgers
Made during the time this whole ‘eating horse meat’ phase was upon us. A grouping of stuff horses eat morphed into a burger. Make like a horse and eat this instead!Creamy Mushroom Mutter
This used to be one of my favorite dishes at an Indian restaurant by where my office was. The place closed down, but it’s okay – because I can make the vegan version – AMAZINGLY!Home Made Seitan (for all your meat substitutes!)
Homemade seitan is a pain worth its weight. It’s a lot of work, but this amount of seitan will last you a while. It’s versatile in about any dish you could use it for! Give it a try!Bella's 'Angeled Eggs'
Bella was the inspiration for these ‘deviled’ eggs. While she was a lil devil here on earth – she’s now an angel, and as such I gave her this tribute – she loved deviled eggs, and these will honestly wow any guest you’ll have at any party! I’ve been asked to make them for non-vegan parties! You’ll be more surprised to know – there’s no tofu in these egg whites AT ALL! * For Bella in Heaven **Cheese* PLATE
Think you’re gonna miss your cheese? I promise with these alternatives, you’ll be wondering why you ever ate the dairy stuff!Vegan Mochi
I’m sure Mochi is amazing with something besides green tea ice cream, but the one I made had the unfortunate event of having green tea ice cream in it. This vegan mochi is great – but try it with a different ice cream. You’ll thank me for that one.Spinach Artichoke Dip
Who doesn’t love Spinach Artichoke dip? We ALL do, especially when it can be made vegan! Serve this at your next party, and be the hostess with the mostess!'Crab' Dip in a Bread Bowl
I used to LOVE crab dip – but crabs, cream cheese and cheese-cheese aren’t vegan – do yourself a favor, bake yourself a bread bowl and put this dip in it… so yum.Cream Cheese Wantons
These little guys have been pinned on pinterest more than a 50’s high school senior! They’re popular and just as yummy as they look. Try these on for size with some ‘duck’ sauce.Hostess Style Cupcakes
What else can I say? These are a hit clear across the board and rival that salad dressing that is supposed to put woman in labor over in LA CA. Make them for yourself and maybe your expectant mother in her 10th month! * For Lori & Lotus *Hostess Style Snowballs
Do you remember these? They taste just the same as the cheap unvegan snowballs of Hostess, but the love of home made. They’re difficult, but worth it! * For Mom *Mini Pumpkin Cheesecakes
These are amazing little bite sized cheesecakes that are perfect for a fall party, or any party!Triple Chocolate Cheesecake
Adapted from the Hershey’s Cheesecake at Cheesecake Factory. It is so rich and so amazing you’ll wonder why there’s not a vegan cheesecake factory.Tiramisu
You may think you’ll never have tiramisu again being a vegan. But I’m here to tell you, that’s simply not true! This is amazingly yummy, just like the un-vegan version.Butterbeer Cupcakes
Calling all Hogwarts fans! Here they are! Butterbeer in a cupcake! Go ahead, thank me, and Harry Potter while you’re at it.Green Tea Cupcakes
Serve these at a fancy little party. They’re so good your guests will eat them up!Twinkies! (tvinkies, twinkvies)
Twinkies. We all used to love them. That golden sponge cake with a creamy center. Too bad there’s beef in the commercial ones! Well, look no further because you’re about to enjoy beefless Twinkies again! (And really, what IS that? Beef in Twinkies?)Pumpkin Cream Cheese Muffins
Actually these could really be dedicated to anyone at my office, but I choose to honor Cindy with them, whom I know had at least three that day, plus about 4 the next time I made them. “She’s cute and she cooks” were her exact words. Basically, they’re amazing enough for the VP of the Dakota Watch Company, so you should try them! * For Cindy *Bleached Blonde Brownies
My mother gets severe headaches with chocolate, so for her birthday I decided upon blonde brownies with white chocolate icing. Were they amazing? I’d say! This was also my very first veganizing attempt for ROVL!Little Debbie Zebra Cakes
Remember these? Yummy yellow cake with a cream filling topped with a shell of white chocolate. Yeah me too – but they’re again, so not vegan. I’ve vegan’d them up though – so you can enjoy them ALL over again!Regina's Un-Poisoned Apple Turnovers
Now, we all know I’m not one to poison one of my best friends, but this one never saw it coming! In one of my Disney veganizations I took the exact recipe from the online source of Regina’s (Evil Queen in Once Upon a Time) original turnover recipe, and veganized it! Laura, being my Snow White – was in love – at first bite! * For Laura *Mini Apple Or Cherry Pies
When you’re in the mood for just a bite, these little quick things will do the trick every time. Pair them with coconut milk ice cream and you’ve got one heck of a dessert! I have a mini pie baker, so that's where these come from. They're also great as one large pie.Crustless Fairytale Pumpkin Pie
This was made from a “Fairytale” pumpkin, but for easier results I suggest cooking a pie pumpkin (or a “Spookie”) for your pulp. You can also use canned pumpkin, but what’s the fun in that?Caramel Apple Crisp
Crisps and cobblers remind me of fall, and this crispy autumn treat is filled with vegan caramel – so yummy.Grandma Grein's Banana Cream Pie with no fail pie crust
Grandma’s banana cream pie is the best, and I think a few of us grandkids have tried to mock it. But with little ‘grandma’ result. I dunno if I’ve made the grade for banana cream pie, but I know as far as VEGAN banana cream pie, grandma would most definitely be proud. * For My Grandma – who would have eaten everything in this book to make me happy. *Little Debbie Oatmeal Cream Pies
You know what I’m talking about. Little Debbie used to tease you with these as a kid. So not vegan. But guess what? They are now!S'Mores Cookies
What could be better than sitting by a campfire, roasting marshmallows and mooshing them between chocolate and graham? Well, these cookies! But remember, marshmallows aren’t vegan folks. *lesigh* But hey – we can recreate because we have vegan marshmallows at our service. So get back to the campfire and sing me a tune!Salted Caramel - Sauce and/or squares
Salted caramels have been a hit lately – and with this recipe, if you time it just right, (or wrong for that matter) you can even make sauce. The timing is key, but they’re good either way you slice or pour them!Maple 'bacon' ice cream
Trust me, I dunno what the fanacity is about this one, but you CAN make it vegan! Try it out and see what YOU think!Black Raspberry Chip Ice Cream
A favorite of mine that was pulled from a recipe close to that of my favorite ice cream when I wasn’t a vegan – Greaters. A Cincinnati tradition. Let’s make a more vegan tradition with this one!Chocolate Mouuse
Who wouldn’t love a big ol’ bowl of chocolate mousse? And who wouldn’t love this one more because it’s yummy AND vegan?! YOUUUMM!!indian rasgulla
This Indian treat that you might think started out vegan – isn’t really very vegan at all – till I got my hands on it. Enjoy a sweet vegan treat inspired by an Indian meal with family. The 'Grey' Stuff (It's delicious!)
Veganized right from the beast’s castle, the grey stuff was a Disney Inspired creation from my Good Vs Evil line. My Belle – not a ‘grey stuff’ fan, actually enjoyed this little tidbit – so did her little ‘Belle’. * For My Megawatt *Mini Cinni's
I guess you could put this in the breakfast section – but why? I eat cinnamon rolls any time of day, and you should too!Tipsy Ducks In Love
Based on an Asian inspired drink, this one really packs a wallop and never started out vegan – but certainly ended here that way!Dole Whip
It’s been said that Dole Whips are now vegan – but this Disney favorite didn’t start out that way, besides, who wants a Dole Whip with a bunch of ingredients you can’t spell!? Try this one on for size! And while you're at it, enjoy the ambiance this video brings! :)Happy New Yeti
Inspired by the ride Expedition Everest at Disney’s Animal Kingdom, we veganized the blue yeti drink and made it for kids AND adults! Enjoy our crazy little New 'yeti' video and have a laugh!'Egg'nog
Who says you can’t make this famous holiday drink vegan? Let me show you how! Then, bring on the merry merry!Candy Corn Cordial
You can be as creative as you want here – but remember you gotta make your own candy corn, because the original is so not vegan.Thank you for your interest in Veganixie's cookbook and for helping support the BakeSpace community of independent cookbook authors!

Rainbows Of Vegan Love
7.99
Rainbows of vegan love is the brainchild of Sheri Fuqua – and a guide on the super easy way to eat all your favorite non-vegan foods vegan. Originally created as a way to get her favorite foods by way of veganism and also to transition her at a more difficult time in her life to help her find that pot of gold at the end of her rainbow. Sheri hopes to pursue a career in helping others see that being vegan doesn’t mean sacrificing anything – in every sense of the word.
This book is dedicated to the friends and family who helped eat their way through all of my vegan dishes every weekend. Those that suffered the fate of being on video audio, and photograph after photograph as well as getting their words published in my blog. You all gave me the strength to keep pushing through to recipe 100.
It’s also dedicated to all of the animals in the world. May we realize their worth here on this planet with us, and understand that they are also living beings to respect. They’re not ours to eat.
Very Special dedication goes to the fur-babies of whom I lost during the course of my project: Orbie Alexander Fuqua & Bella Lucille Fuqua Also – to my Grandma Grein. Best Cook in the entire world and super foodie inspiration.
And this cookbook is dedicated as a whole to Analeah - at the end of my rainbow.
