Mexi-Licious Chicken and VeggiesI was craving chipotle and well who doesn't love chipotle, but in our household we worry about not knowing what seasonings are on the meats and then we are to tempted when we go there to get rice, a tortilla, or any other no no items when you are wanting to switch to a Paleo diet. So during our transition into the Paleo lifestyle was born this thrown together meal that we just ate with slices of avocados' and salsa.
Green Beans with Caramelized Onions and TomatoesWell I am from the South... And I absolutely love green beans.. Typically smother in butter and seasonings, but that isn't very healthy. Since being Paleo I have had a great love for Onions (especially caramelized) and tomatoes. So I started added them to so many side dishes and main dishes and for most things they have worked and have become staples in our house.
Chicken Sausage with VeggiesWe do not eat pasta anymore so when usually we have chicken sausage over buttered noodles well we needed an alternative. So one night I sliced and diced all kinds of veggies and we were NOT disappointed. We are very happy to eat this now over pasta any day! The flavor combination is amazing and filling.
Flourless BrowniesI originally found this recipe on skinny taste and it was very delicious.. Once going paleo I switched the sugar out for raw honey.. These are so very delicious and I made a batch for a girls night and they were a hit even after I told them the staple was black beans. :)
Mamacita GuacamoleWell I am half Mexican and I love some amazing guacamole. My mom makes it one way and my grandma another.. as well as every place is quite different. Well this is my Version and we all love it!

Spaghetti Squash Pizza CrustI LOOOOOVVVEEEE Pizza... I mean who doesn't! Okay so I found a smiliar recipe from Pinterest and then looked up a few different ones and then made my own rendition. This crust actually adds so much flavor and amazingness for pizza. A Pizza you don't have to feel guilty about for eating more than a slice or two.. even three!
Asain Glazed ChickenSo I originally got this recipe from a friend who said she found it on Skinny taste.. I have never looked it up, but I know originally it called for chicken thighs and I just love chicken breast meat so much better so that's what I use.
Zucchini Pizza BitesOkay this goes back to pizza.. We all love it, but this is a great alternative and a yummy Meal, appetizer, or even a snack. Bite size like bagel bites :) But a way healthier option! Got this from Skinny Taste a free years ago!
Barbacoa BeefHere we are again LOL Chipotle.. who doesn't love some Barbacoa beef from there.. YUMM lol So I got how to make this from my close friends Grandma a few years ago.. Its amazing and I love it!
Banana Yum Yum Granola BarsI love granola bars, but they are expensive or have unhealthy preservatives in it. So for my sake I found some granola recipes to make at home! A friend of mine sent me this recipe.. She lives overseas and I have no clue where she got it from, but I love it!
WHAT WHAT-Healthy Peanut Butter CupsOh yes you read that right! Healthy Peanut Butter Cups.. OH MAN does my husband Love some peanut butter cups. Who doesn't.. Delicious Right! :) Got this from a friend of mine who knew how much we loved our peanut butter and sweets so knew this would be a home run for us. I was quite surprised since this was when we were first on a path to becoming healthier.
Stir Fry VeggiesI love stir fry.. It is so delicious. I love to make this and add some cooked shrimp or chicken. Very good complete meal all on its own or with the meat added :)
Spaghetti Squash SpaghettiPasta was a hard thing to stop eating.. until I started making this spaghetti squash "pasta". Its amazing and was happy to find this website online that showed step by step how to make it. So of course it was only natural to add ground beef and marinara. YUMM!!
Chicken Asparagus BowlWell I love asparagus and my husband isn't a huge fan, but he will eat it if its there... I love this because the chicken is tender and the asparagus has a bit of a crisp to it. It is flavorful, sweet, savory, and super simple! It was what was in the fridge one night so this is what came of it and oh boy I was so happy to accidently have made this!
