Albondigas is Spanish for meatballs. These little Mexican meatballs make for a hearty soup. Serve it with crusty bread and a crisp green salad.

Emeril's Chuck Wagon Chili
The original recipe calls for chuck roast, but I prefer ground beef in my chili. Either way, this is an excellent chili. If you prefer to omit the beer, just substitute beef broth or water.

Italian Sausage Soup with Tortellini
This is one of my favorite soups. Italian sausage is optional; it tastes great with or without it. I prefer to cook the tortellini separately, then add it to the soup bowls individually. That way, they don't get too mushy.

I got this from a friend I met on our tour in Hawaii, who grew up in South America. This is such a versatile soup! Basically, you can use any vegetables you have on hand. Spice it up as much or as little as you want. It's filling enough to be a main meal. This is one of my family's favorite soups.

When I have more time to make a really rich and robust tomato soup, I turn to this one. Try it with "The Best Grilled Cheese" by the Pioneer Woman. You will never eat a better combination!
