Vegan Baked Walnut Eggplant BurgerOne thing about veggie burgers I've learned, you can use pretty much any kind of cooked vegetables, seasoned the way you like them, as long as you learn to bind ingredients together, holding power! I've experimented with various combinations, and this one has a great chewy texture, and holds together well. Of course the secret is the seasonings, as always.
Vegan Eggplant PizzaEggplant is one of most delicious, plant meaty and chewy vegetables that I have grown to love. It's very versatile and can be used in place of meat in many recipes. In this case, I used it in place of bread, to cut calories. It seems every time I eat if for dinner, I wake up 2 pounds lighter!
Juicy Vegan BBQ Eggplant SteaksI'm crazy over eggplant, and it makes a sensational transition away from meat as a vehicle for delicious seasonings. I'm hoping by sharing this one it will inspire another compassionate person to be vegan.

Cashew Cheese SauceI love rich and creamy dishes, and cashews are the vehicle to make that happen. Use this on pasta dishes, rice, over vegetables, and in lasagne for delicious 'ricotta.' Play around with the seasonings. Make it like this, or make it sweet for a dessert topping. Enjoy!
Vegan LasagnaEvery time I ask my family what they would like me to make, I get a request for lasagna. So, when I became vegan, I had to learn how to replace meat and cheese with delicious plant-based alternatives. I was a little concerned about pulling it off, but it turned out to be a grand success! Not only is it scrumptious, but it's good for the soul, knowing that it's cruelty free, and oh so healthful to eat!

Persimmon Walnut Smoky Maple Tempeh BreakfastThe closer to natural you eat, the more nutritious. Natures 'fast food' is beautiful, colorful, nutritious, and oh so very satisfying. This not a recipe per se, just a great idea to get you started on a compassionate vegan meal plan.

To live is to change. I now understand peace starts on my plate.
