I am a Professor of Critical Thinking, by day and a Pie Baker during the other 16 hours of the day, I am addicted to creating culinary masterpieces.
I am also an Adjunct for Central Piedmont Community College teaching Soup to Nuts Strategy for Starting a Successful Food Business, a course for food-crafters and cottage food operators who want to take their specialty food products from kitchen to market.
My culinary background is extensive, reaching back to the mid 1980s as a caterer, was featured in Bon Appetit magazine. I then relocated to Cary, NC in 2005 and sold her divinely delicious pies at the Raleigh Farmers Market.
In 2007 Detra created a Cottage Food Course for the Wake County Lifelong Learning Program in Cary, NC, titled Profits from Your Kitchen: Starting a Home-based Bakery; the course was created into an course in 2009 and in 2011 Detra was asked by Globe Pequot Press to write a book introducing food crafters to the cottage food industry. Today I own and operates the Charlotte Pie Authority, a micro bakery selling Artisan pies to Charlotteans, and teach online Foodprenuer Institute and host a streaming Food Entrepreneurship course for Central Piedmont Community Colleges Small Business Center.
