The GF diet is quickly becoming a necessity of life for so many and a personal choice for many more. Up until about 8 yrs ago we had never heard of Celiac Disease and GF diets. It has only been a few years that the “Gluten Free” World has been highlighted in the media which has now exploded onto the main stage. Our first exposure to the GF World was in our little bakery in Peggy’s Cove, Nova Scotia Canada. One day an older gentleman came in asking for any GF items we might be selling. “What is that?” we asked. After explaining what it meant and that he was diagnosed as celiac a few years Soo was moved to tears. Not because of the disease but because he informed us that it was so difficult to find GF foods, he didn’t cook as he was a widower and he was relegated to eating crackers, some cereals, dried out frozen breads and fruits/vegetables but nowhere could he find prepared foods to go. Soo went to work immediately. Her mission? To feed people equally. And that meant that she wanted to develop the skills that allowed celiacs to eat the same foods as everyone else without sacrificing quality and taste…That man is STILL our customer. From soups to sauces, coatings, breads, desserts, Western and Eastern…Soo has developed hundreds of recipes and techniques for the GF diet which we will be sharing with you over the course of our ebooks.
