Let me start by saying, I am not a nutritionist or even a college graduate. I was lucky to make it through high school. I am a 54-year-old, 183-pound widow with a 13-year-old daughter who knows what tastes good. I love food and hate exercise! I actually get excited talking about recipes that I am going to try. The joy I get from chewing...okay you get the picture...I am addicted to food! So how can a food addict lose weight and get into shape? The only way I saw to do it, was by finding new ways to prepare foods that I love. Trust me when I say, I would rather stay at 182 pounds than give up enjoying my food. This is not a healthy or smart thinking process for any person to have. My plan of action: I will spend hours upon hours (nothing new to me) on the internet looking for recipes that are low calories, low fat and low in all the areas that make food enjoyable. What has driven me to this adventure ...I have a daughter that needs me around for many more years. So, I need to find a way to remove most of the carbs, fat, sodium and sodas. What’s left then, how can you enjoy a meal without your dear and faithful friends? I guess it is now time to make new friends. I need to throw out all my dear old recipes (the thought of this gave me hot flashes) and start...but where would I start, of course, my pal the computer. Though I don’t need to follow the SCD diet, I made the choice to incorporate it into my way of eating with approval of my doctor.
