70 year old retired infantryman; semi retired lawyer with a wonderful wife who puts up with me and allows me to do most of the cooking in return for her handling KP (kitchen police or cleanup after I make a huge mess). I love to cook good food - mostly French or Cajun (mom was born in LA and spoke French before she spoke l'Anglais). Hate pseudo Cajun restaurants where they have the food overly loaded with cayenne pepper. Real Cajuns use spices and peppers to enhance and do not overpower their dishes. A close second to French style; however, is Italian. I have never been to Italy and think it is the most beautiful language. I speak some French which is the language of Love but Italian is the language of Passion and it shows in their cuisine. Not much of a baker but hope to learn
