"213 Panini" with Tofu Feta, Hummus, and Fresh Tomatoes

Why I Love This Recipe
This was the "5 Ingredient Challenge" recipe for Episode 2 of The Vegan Roadie in Ft. Lauderdale, FL.
A panini is basically a toasted sandwich on Italian bread. On my panini's I LOVE to use my Tofu Feta (separate recipe included in this e-cookbook). Though I used Italian bread, you could also use ciabatta, whatever you have laying around, or your favorite bread. I chose these ingredients because I like the flavor combination of the hummus, banana peppers and tofu but feel free to choose other ingredients you enjoy or just add more to this recipe. You could also add a flavored hummus or a brown mustard to make it pop!

Ingredients You'll Need
Main 5:
3/4 cup tofu feta (separate recipe located in this e-cookbook)
1/2 small tomato
Banana Peppers, to taste
2-3 tablespoons hummus
2 slices Italian bread (or bread of choice)
Pantry Items:
Salt & pepper, to taste
Directions
Spread your hummus on the bottom slice of bread
Slice your tomatoes and place on bottom slice with the hummus
Place banana peppers on top of the tomatoes
Add your tofu feta on top of everything else
Slap your top slice on and smash it in a panini press, George Foreman or whatever you got for about 3 minutes per side to your desired grill level.
Eat and enjoy!
