“Aunt Mandy’s” Rhubarb Pie

May be kosher and/or ovo-lacto vegetarian, depending on type of shortening used.
Ingredients You'll Need
Pie Ingredients:
One 8” pie shell, uncooked
3-1/2 C rhubarb, thin slices
2 egg yolks
2 C sugar
1/2 tsp salt
1/2 tsp cinnamon
1/8 tsp nutmeg
1/2 C flour
Meringue Ingredients:
2 egg whites
4 T sugar
1/4 tsp cream of tartar
Directions
Mix all filling ingredients.
Pour into uncooked 8” pie shell.
Bake at 400 degrees for 45-50 minutes.
Make meringue by whipping egg whites and cream of tartar until stiff, then gradually adding sugar
Top pie with meringue.
Bake another 5 minutes at 425 degrees.
