recipe and directions based on Brendon's recipe from Something in Season


Ingredients You'll Need

3/4 c almond meal
2 cups brown rice flour
1 teaspoon guar gum
¼ teaspoon salt
3 teaspoons baking powder
1 teaspoons ground cinnamon
¾ cup brown sugar
3 eggs
1 teaspoon vanilla extract
1/4 cup water (if necessary)
-1 1/4 c almond slivers and sliced apriocts mixted together
-option: add 1 1/4 cup raw chocolate powder


Directions

Preheat the oven to 375 degrees


sift all dry ingredients together


add wet to dry


knead together the dough until it forms a single ball and cut it into four equal pieces


Roll the ball into a log and lightly flatten it onto a lined jelly sheet.


Repeat with the rest of the dough


Bake for 24 minutes


reduce heat to 250 degrees.


Allow biscotti to cool for 15 minutes


Cut logs into diagonal slices and


Bake for 7 more minutes
