Deliciously Spicy Meatloaf

Inspired and in need of a home cooked meal to make for my friend's birthday, I jotted down a few notes and from those made a meatloaf today
Ingredients You'll Need
1 medium onion - finely chopped
1 clove garlic, mashed and minced
1 medium carrot, chopped (fairly finely)
2 celery ribs, chopped (fairly finely)
Oil
1/2c plain bread crumbs
about a tsp italian herbs
a few shakes of lawry's seasoned salt
a few shakes of plain ol salt
a tsp ground pepper
ground red pepper to taste (I used several shakes)
tobasco to taste (I used several shakes)
about 2T worcestershire sauce
3 slices white bread soaked in water and squeezed out
2 eggs
2 lbs ground beef
ketchup
Directions
add a couple of splashes of oil to a frying pan and set to med high heat
add the veggie mix and turn the heat down to medium
saute the until onions are nice and brown, but not burnt!
set aside to cool
add next 11 ingredients (bread crumbs to eggs)to a big bowl and mix well.
mix it all smooth
add the veggies and mix
then add ground beef
mix it all up well and form it into a loaf on a parchment paper lined baking sheet
slather generously all over the top and sides with ketchup
toss in the oven for about an hour
I waited for the ketchup to lose the gooey look
While that is cooking make mashed potatoes
The key to mashed potatoes: while you're letting the just boiled tubers drain in a strainer, toss butter and milk in the empty pot they were boiled in, heat until the butter is melted, add the potatoes to the mixture, add whatever other flavorings (I use salt and pepper), over medium-low to low heat, mash it all together
The point is it needs to dry out
The longer you mash it over the heat the better
Not browned though
Just don't stop mashing and mixing it up until you remove from the heat
Yum!
