Super simple low point vegetable soup!

Ingredients You'll Need
28 1/2 oz Can diced Tomatoes
14 oz Mixed frozen vegetables
1 small cabbage or bag of angel hair Cole slaw
10 fl oz Low sodium V-8
1/2 Cup onion
1 tbsp minced garlic
1 box low sodium chicken broth
Directions
Use sauté function on Instant Pot and cook garlic and onions until onions are translucent.
Add remaining ingredients and use Soup function on instant pot. If your Instant Pot does not have the Soup function, cook for 30 minutes on high pressure. Then allow a natural release.

I add mozzarella cheese and it makes the soup nice and creamy.
