Why I Love This Recipe
This is one of our favorites also. I sometimes use pecan instead of walnuts and you can add chopped nuts sprinkled over the top of the frosting.
Ingredients You'll Need
2 C flour
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 tsp cinnamon
2 C sugar
1/2 C salad oil
4 eggs
2 C finely grated carrots
1 (8 1/2 ounce) can crushed pineapple (drained)
1 C. raisins
1 C. chopped walnuts
Directions
Mix first ingredients well.
Add the pineapple, raisins and nuts.
Pour into greased 9 x 13 inch baking pan.
Bake at 350 F for app 45 minutes.
Frost with cream cheese frosting.
