15min Udon Stir Fry

Why I Love This Recipe
FEATURING: Swiss chard, kale (or any other leafy green), zucchini and/or pattypan, green onions, basil (Thai or Italian).
Another simple yet tasty asian dish that is quick to make and that our kids love. Easily adaptable based on what veggies you have at hand! OPTIONAL: You can also add any protein of your choice, if you'd like!
Ingredients You'll Need
STIR FRY
2 Tbsp sunflower oil, or other neutral cooking oil
2-3 green onions, chopped
2 garlic scapes (or garlic cloves, peeled), minced
1-2 zucchini and/or pattypan, chopped
6 cups of chopped leafy greens (ex: 2-3 leaves of swiss chard
and 3-4 kale leaves)
1/2 cup of fresh basil (Thai or Italian), or to taste
800 g of soft vacuum-packed udon noodles *** SEE NOTE ***
SAUCE
2-4 tsp Sambal Oelek, or Asian Chili Garlic Sauce/Sriracha, to taste (use less if you don't like spicy food)
1/2 cup Tamari or soy sauce
4 tsp rice wine vinegar
2 tsp sesame oil
2-4 Tbsp brown sugar, or to taste
2 garlic scapes (or garlic cloves, peeled), minced
2 Tbsp fresh ginger, minced (optional)
FOR GARNISH:
Sesame seeds
Additional sliced green onion
More basil or cilantro
*** NOTE ON UDON NOODLES: You can also use frozen udon or dried udon noodles. Simply prepare per the package instructions before using. Dried udon will need to be boiled, but frozen udon can usually be used after a quick soak in hot water.
Directions
SAUCE: Mix up the sauce by combining all the ingredients in a small bowl. Set aside.
PREPARE THE STIR FRY: In a large frying pan or wok, heat oil over medium-high heat until very hot. Add green onions and cook, stirring for 30 seconds to a minute or so. Add the zucchini and/or pattypan and cook, stirring, 2-3 min. Add the leafy greens (but make sure to keep 1-2 handfuls aside), stirring, for another 2-3 min, until the zucchini is still crisp but tender and the leafy greens have just wilted.
If using vacuum-packed udon noodles, you can add them straight to the pan, stirring, for 30 seconds or so. Add sauce and cook for another 30 second, stirring to combine well. Scatter a few handful of reserved leafy greens over top and cook, stirring constantly, until leafy greens are wilted.
Remove stir fry to a bowl or plate and garnish with sesame seeds, additional sliced green onion and basil/cilantro.
