Why I Love This Recipe
This is my very simplified take on Jamie Oliver's "Real Mushroom Soup" recipe. While his is absolutely amazing, as he's using wild mushrooms, this is a 10-minute variation, so to say
Ingredients You'll Need
2 cups low-sodium broth (vegetable or chicken, whichever you prefer)
1/2 lb mushrooms, preferably fresh, cleaned and sliced
1-2 tbsp mascarpone
A knob of butter or a little olive oil
Directions
In a medium pan, sautée the sliced mushrooms in a little butter or olive oil, depending on your taste (I used salted butter)
Add the broth and mascarpone
Stir a bit then whiz until smooth
