Why I Love This Recipe

A marinade filled with umami and bold earthy flavors.


Ingredients You'll Need

1/4 Cup Soy Sauce, low sodium
1/4 Cup Garlic Oil, check cookbook for recipe
1 Teaspoon Fresh Ginger, grated
1 Tablespoon Shaoxing Wine
1 Teaspoon Cassia or cinnamon, ground to a powder
1 Teaspoon Clove, ground to a powder
1 Teaspoon Star Anise, ground to a powder
1 Teaspoon Szechuan Peppercorn, ground to a powder
1 Teaspoon Fennel Seeds, ground to a powder
1/4 Teaspoon Toasted Sesame seeds


Directions

If using whole spices, toast them slowly in a saute pan first on low to medium heat. Once the oils start to release and you smell the aroma, it's ready. Let them cool completely before the next step.


Use a mortar & pestle to make powder of the dry spices or use a spice grinder.


Combine all liquids then grate ginger to get juice and add that to the mix.


Combine everything and marinate your favorite piece of vegetable or protein.


Pairs Well With

Anything for the grill or oven.
