This was always my dads favorite for Thanksgiving. It has a good lemon flavor and lives up to the 7-Up name.

Ingredients You'll Need
For the cake:
1 box lemon cake mix
3/4 cup vegetable oil
1 small (3.4 oz) box of instant lemon pudding mix
4 large eggs
1 1/4 cups 7-Up (or other lemon-lime soda)
For the Filling:
1 20oz can crushed pineapple, drained
1 1/3 cup sweetened flake coconut
1 1/2 cup sugar
1 stick butter
2 eggs
2 tsp corn starch
Directions
For Cake:
Preheat oven to 325°F. Meanwhile, grease and flour three 9-inch round cake pans.
Combine oil and eggs and beat until well incorporated.
Add cake and pudding mixes on low speed, followed by the 7-Up.
Beat on high for about 2 minutes.
Evenly distribute between the three cake pans. Bake for 20-25 minutes or until a toothpick comes out clean.
For the filling/frosting:
Combine all of the filling ingredients, EXCEPT for the coconut, in a medium pot and bring to a boil over medium heat, stirring constantly.
Reduce heat and simmer for 5 minutes.
Remove from the heat and stir in coconut. Allow to cool completely before frosting the cake.
