APPLE THYME STUFFED PORK CHOPS

Stuffed pork chops are an Autumn favorite in our house. With a calorie count of 350 these pork chops taste wonderful without being too heavy. Perfect for early Fall.
Ingredients You'll Need
1 ½ lbs. pork loin cut into 4-6 thick slices, with a pocket cut into the side of each
1 c. of peeled and diced apple, 1-2 apples
½ c. Wisconsin sharp white cheddar, grated
¼ c. diced onion
1 T. fresh thyme, minced
Freshly ground sea salt and freshly ground black pepper to taste
1 T. butter or olive oil
Directions
Mix together apple, onion, and cheese. Stuff this mixture into the pocket of each pork chop as full as you can, secure it closed with a toothpick. Season chops with salt, pepper, and thyme. Heat 1 T. butter or olive oil in a skillet, sear pork chops on each side until lightly browned. Transfer to slow cooker, cover and cook on low 6-8 hours or on high 3-4 hours. Remove toothpicks before serving.
