ARTICHOKE AND SPINACH FRITTATA

Ingredients You'll Need
1 (6 oz.) jar marinated
artichoke hearts or bottoms
1 large onion, chopped
1 clove garlic, minced
4 eggs
1/2 tsp. salt
1/4 tsp. pepper
1 pkg. frozen chopped spinach,
cooked, drained and pressed
dry
1 c. grated Parmesan cheese
1 tsp. minced parsley
Directions
Drain oil from artichoke hearts into small skillet. Add
onion and garlic; saute until onion is transparent. Set aside.
Meanwhile, in a medium bowl beat eggs until foamy. Dice
artichoke hearts and add to eggs along with onion and garlic
mixture and all remaining ingredients. Mix well. Pour into
greased 9-inch square baking pan. Bake in preheated 325 degrees oven
for 25 minutes. Cool slightly. Cut into 25 squares. Serve
warm or cold.
