Why I Love This Recipe

The Nigerian Afang soup is a native delicacy of the Efiks and Ibibio people of Cross River and Akwa Ibom States of Nigeria but enjoyed by all Nigerians. A soup popularly used to welcome visitors and returning family members.

Ingredients You'll Need

400g sliced Okazi/Afang(African Salad) leaves | about 4 handfuls(should be blended)
250g or four bunches of Water leaves
20 to 25 cl red palm oil (about 1 drink glass)
Beef, Kanda(cow skin) and Dry fish, stock fish
2 tablespoons ground crayfish
Pepper and salt (to taste)
2 stock cubes


Wash drain and slice the water leaves thinly

season and boil the beef and kanda till soft

add the dry fish and stock fish, cook for 5mintes

Add the water leaves, allow to boil a little, add crayfish and other condiments like stock cubes

Add the palm oil allow for a minute

add the blended afang (African salad)leaves

stir and bring down the pot( I prefer to bring down the pot as soon as the afang leaves are added to ensure it i still very fresh.
