Why I Love This Recipe
Sweet potatoes are often mistakenly called yams, but they are entirely different species. Sweet potatoes are rich in beta-carotene, which supports eye health.
Ingredients You'll Need
4 medium sweet potatoes, peeled and cubed
3 tablespoons agave syrup
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon ground cinnamon
1/2 teaspoon ground cumin
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the agave syrup, olive oil, smoked paprika, cinnamon, cumin, salt, and pepper. Whisk together until the mixture is uniform.
Add the cubed sweet potatoes to the bowl, and toss them well with the agave mixture until evenly coated.
Spread the sweet potatoes evenly on the prepared baking sheet, ensuring they are in a single layer to allow for even roasting.
Roast the sweet potatoes in the preheated oven for 25–30 minutes, stirring halfway through, until they are tender and slightly caramelized.
Remove from the oven, let them cool for a few minutes, and garnish with chopped parsley if desired.
Serve warm as a side dish or as part of a larger meal.
Pairs Well With
Pairs well with sparkling water infused with lime (non-alcoholic) or a light Riesling wine (alcoholic).
