Ingredients You'll Need
Sourdough Starter ingredients:
3 large potatoes
2-2 1/2 cups of flour
1-2 tablespoons of sugar
Sourdough pancakes ingredients:
2 cups of water
1 egg
3 tablespoons of oil or melted shortening
2 tablespoons of sugar
1/4 teaspoon of salt
1 teaspoon baking soda
1 tablespoon of warm water
Directions
Boil three large potatoes until they are falling apart, cool to room
temperature and do not drain. Stir the softened potatoes until they are like mush and add water if needed to make 2 cups of liquid. Then in a non-metal bowl, combine 2-2 ½ cups of flour and 1-2 tablespoons of sugar with a non-metal spoon.
The mixture should be thick and creamy but not stiff. You can add
flour to thicken it or water to thin it. If there are lumps, the sourdough bubbles will break them down. Cover it loosely and store in a warm place.
When the mixture begins to bubble after a day or two, add a half cup of both flour and water and add a teaspoon of sugar.
The starter is ready to use when it is full of bubbles and gives off a good sour aroma.
Sourdough Pancakes
In a non-metal bowl, add two cups of starter, one egg, three tablespoons of oil or melted shortening, and two tablespoons of sugar.
Dissolve ¼ teaspoon salt and one teaspoon baking soda in one tablespoon of warm water. Mix the first five ingredients together.
Gently fold in the soda and cook immediately.
