Why I Love This Recipe

Delicious, healthy, and indulging banana bread, high in protein and antioxidants from almonds, olive oil, and cinnamon.


Ingredients You'll Need

Wet ingredients:
2 ripe bananas - mashed with the fork
70 ml oat milk/ almond milk
70 ml extra virgin olive oil
2 whole eggs
100 g brown sugar
1 tsp almond essence
1 tsp vanilla essence

Dry ingredients:
200 g almond flour
65 g plain flour
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 teaspoons baking powder
100 g chopped unsalted nuts (almonds, or mixed nuts)


Directions

preheat the oven at 175-180 degrees Celsius


mix the wet ingredients with a whisk


pour them over the wet ones and mix until just combined


use a loaf pan lined with baking paper


bake at 170-180 degrees, middle of the oven, up&bottom, no convection, for 40 min


let cool in the pan for 10 min
