Why I Love This Recipe

Did you know that soda bread was originally created in Ireland as a way to use up leftover sour milk? The addition of baking soda helped to neutralize the acidity, creating a quick and delicious bread without the need for yeast.

Ingredients You'll Need

4 cups (500g) all-purpose flour
1 tsp salt
1 1/2 tsp baking soda
2 cups (480ml) unsweetened almond milk, divided
2 tbsp (30ml) unsweetened almond milk, for brushing


Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, salt, and baking soda.

Make a well in the center of the dry ingredients and pour in 1 3/4 cups (420ml) of the almond milk. Mix with a wooden spoon or your hands until a shaggy dough forms.

Turn the dough out onto a lightly floured surface and knead gently, just until the dough comes together (avoid over-kneading).

Shape the dough into a round, slightly flattened loaf, about 8 inches in diameter. Place on the prepared baking sheet and use a sharp knife to score a deep 'X' on top of the loaf.

Brush the top of the loaf with the remaining 1/4 cup (60ml) of almond milk.

Bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom. Check for doneness by inserting a skewer or toothpick into the center of the loaf; it should come out clean.

Allow the bread to cool on a wire rack for at least 30 minutes before slicing and serving.

Store any leftovers in an airtight container at room temperature for up to 3 days.

A refreshing glass of chilled almond milk or a fruity herbal tea.
