Why I Love This Recipe

Serve with butterscotch ice cream for an ice cream cookie sandwich or a la mode style!

Ingredients You'll Need

3/4 cup whole wheat flour
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup chilled almond butter
1/3 cup brown sugar
1/3 cup white sugar
1 cup almond milk
2 teaspoons vanilla extract
1 egg
1/2 cup mini semisweet chocolate chips

Directions

In a medium bowl, sift together the whole wheat flour, all-purpose flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, mix together the almond butter, brown sugar, and white sugar until the mixture reaches a creamy consistency.

Add the almond milk, vanilla, and egg to the large bowl. Mix until smooth.

Gradually add the flour mixture from the medium bowl into the large bowl, mixing after each addition.

Pour in the chocolate chips, then chill the batter in the fridge for 1 hour.

Heat the oven to 350° F. Spread parchment paper along a baking sheet. Place spoonfuls of dough (about 1 Tablespoon each) onto the baking sheet 2 inches apart from one another. Bake for 15 minutes or until golden brown.
