Almond Chocolate Truffle Squares

Ingredients You'll Need
3/4 cup Almond Milk (buy in natural foods' store as well as some regular grocery stores)
1 lb. dark chocolate (this can be any kind of naturally sweetened, like chips made without sugar, or blocks of dark chocolate)
1 1/2 teaspoons almond extract
1 tablespoon vanilla extract
1/4 cup roast almonds, finely chopped
Directions
Line bottom of an 8 inch square baking dish with wax paper. In medium saucepan, bring almond milk just to a boil andremove from heat. Add 12 ounces of the chocolate into boiling almond milk (if it's a block, break into small pieces first). Mix well until chocolate is melted. Add almond extract and vanilla extract and set aside.
Melt remaining 4 ounces of chocolate in a double boiler or in a bowl over a pan of simmering water. Using pastry brush, brush half of melted chocolate on was paper in baking dish. Set in freezer for 5 minutes.
Pour almond milk-chocolate mixture over layer of chocolate in baking dish. Sprinkle almonds over the mixture. Drizzle remaining melted chocolate over the almonds. Refrigerate until set (at least 3 hours) or freeze for 1 1/2 hours. Turn out of the pan and cut into squares.
