Why I Love This Recipe
Almond Milk Homemade Soda Bread -- Perfect for anyone looking for a dairy-free option without sacrificing any of the joy baking brings. The almond milk creates a surprisingly tender crumb, and I can't get enough of it.
Please note, because this does not have any baking powder or baking soda, the bread is dense -- very dense. I like it, but just know it's also flat and bakes to be about an inch tall.
Ingredients You'll Need
4 cups of all-purpose flour
1 teaspoon of salt
1 and 3/4 cups of almond milk
1 tablespoon of lemon juice (as a substitute for vinegar)
Directions
Preheat the oven to 425°F (220°C) and lightly flour a baking sheet.
In a bowl, mix together the almond milk and lemon juice. Let it sit for about 5-10 minutes to curdle and mimic buttermilk.
In a large mixing bowl, combine the all-purpose flour and salt.
Make a well in the center of the dry ingredients and pour most of the "buttermilk" into it.
Mix with a wooden spoon until the dough comes together, adding more "buttermilk" if needed.
Turn the dough out onto a floured surface and gently knead it into a round loaf.
Place the loaf on the prepared baking sheet and score a deep cross into the top.
Bake in the preheated oven for 15 minutes, then reduce the heat to 400°F (200°C) and bake for an additional 25-30 minutes or until the bread sounds hollow when tapped on the bottom.
Allow the bread to cool on a wire rack before slicing and serving.
