Aloo Paratha is a popular North Indian flatbread that is stuffed with a spiced mashed potato filling. It’s a delicious and hearty dish often enjoyed for breakfast or lunch, though it can be eaten at any time of the day. The paratha is typically served with yogurt, pickle, and sometimes a dollop of butter or a side of salad.

2 large potatoes (boiled and mashed)
1 medium onion (finely chopped, optional)
2-3 green chilies (finely chopped, adjust to taste)
1 tsp cumin seeds
1 tsp garam masala
1/2 tsp turmeric powder
1/2 tsp red chili powder
1 tsp coriander powder
Salt to taste
Fresh coriander leaves (finely chopped)
1 tbsp ginger (grated, optional)
1 tbsp lemon juice (optional)
Directions
Instructions:
1. Prepare the Dough:
In a large mixing bowl, add 2 cups of whole wheat flour and 1/2 tsp salt.
Gradually add water, little by little, and knead to form a soft, smooth dough. You may need about 3/4 cup of water, but it depends on your flour.
Once the dough is kneaded, cover it with a damp cloth and let it rest for 15-20 minutes.
2. Prepare the Filling:
Boil the potatoes until they are soft and tender. Peel and mash them well, making sure there are no lumps.
In a pan, heat a little oil (or ghee) and add cumin seeds. Once they splutter, add finely chopped onions (if using) and sauté until golden brown.
Add green chilies, ginger, and all the dry spices: turmeric powder, red chili powder, garam masala, and coriander powder. Stir well for 1-2 minutes.
Add the mashed potatoes to the pan. Mix well and cook for another 2-3 minutes.
Turn off the heat and add fresh coriander leaves and lemon juice (if using). Let the filling cool to room temperature.
3. Make the Parathas:
After the dough has rested, divide it into equal-sized small balls (about the size of a golf ball).
Take one dough ball and flatten it slightly with your palms. Roll it out into a small circle (about 3-4 inches in diameter).
Place a spoonful of the prepared potato filling in the center of the rolled dough circle.
Carefully fold the edges over the filling to seal it, then gently flatten it again with your palms to form a ball.
Roll this filled dough ball carefully into a flat circle (6-7 inches in diameter), making sure the filling doesn't spill out. You can sprinkle some flour to prevent sticking.
4. Cook the Aloo Paratha:
Heat a tawa (griddle) or non-stick pan over medium heat.
Once hot, place the rolled-out paratha onto the tawa. Cook until you see small bubbles forming on the surface (about 30 seconds).
Flip the paratha over and cook for another 30 seconds.
Now, add a little ghee or oil to the cooked side and flip again. Apply ghee or oil to the other side and cook until golden brown and crispy, pressing lightly with a spatula to ensure even cooking.
Repeat the process for the rest of the dough balls.
5. Serve:
Serve the hot, crispy aloo parathas with yogurt, pickle, or a side of salad.
