This is Amaya Papaya’s Glow-Up Galette—a free-form, fruit-filled masterpiece that doesn’t need anyone’s approval (or crusty ex situationships) to rise. Bursting with ripe papaya, juicy berries, and a kiss of lime, it’s sweet, sharp, and absolutely stunning. Just like our girl. Because when life gives you lemons—or papayas—you make something hot, flaky, and unforgettable.

Ingredients You'll Need

1 sheet pre-made pie crust
1 cup ripe papaya, peeled and sliced thin
1/2 cup strawberries or raspberries
Zest of 1 lime
Juice of 1/2 lime
2 tbsp sugar
1 tsp honey or agave
1 tbsp cornstarch
1 egg yolk (for brushing, beaten)
Optional garnishes: mint leaves, powdered sugar, crushed edible petals


Directions

Preheat oven to 400°F.


Line a baking sheet with parchment paper.


In a mixing bowl, combine sliced papaya, strawberries/raspberries, lime zest and juice, sugar, honey, and cornstarch. Mix gently and let it rest for five minutes.


Roll the pie crust onto the baking sheet.


Spoon the fruit mixture into the center of the pie crust, leaving a 2-inch border around.


Fold the edges of the crust over the fruit, creating pleats as you go—a rustic look is ideal.


Brush the crust with the beaten egg for a golden finish when baked.


Bake the galette in the preheated oven for 35 minutes, or until the crust is golden brown and the filling is bubbling.


Allow the galette to cool slightly before garnishing with mint leaves, a dusting of powdered sugar, and edible petals if desired.
