Amish Slaw aka Refrigerator Slaw

"This is an non-creamy coleslaw of which you can not get enough!"

This is a great make-ahead slaw, the longer it stands the better it gets. It is easy to make and tastes so clean and good. I goes with any meal!
Ingredients You'll Need
1 medium head cabbage, cored and shredded
1 medium onion, finely chopped (I prefer sweet onion)
2-3 carrots, grated
(optional: thinly sliced red peppers)
1 cup white sugar
1 cup vinegar
1 tsp salt
1 tsp celery seed
1-2 tsp mustard
3/4 cup vegetable oil
Directions
Prepare cabbage, carrot, and onion and mix together in large bowl.
Mix together remaining ingredients and put into saucepan. Bring to a boil over medium heat and then cook over for 3 minutes.
Cool vinaigrette completely.
Pour over slaw veggies and let stand for a minimum of 3 hours or overnight is even better.
